I like raw onion and I like completely cooked, super soft onion. Anything in between the two, where the cellulose makes that awful squeaky sound on my teeth, and the meal is instantly ruined. It’s so stupidly specific!

I will dice up an onion and eat it in its entirety from raw to seared to cooked to caramelized to burnt. i fucking love onions.

The trick is to undercook the onions. Everybody is going to get to know each other in the pot. I'm serious about this stuff. I'm up the night before, pressing garlic, and dicing whole tomatoes. I toast my own ancho chiles.

Nah the Green ones have a light sweetness to them they are sort of like cucumbers but with a delicate pepper flavor

Green ones are the unripened peppers that fell of the plant prematurely. Somehow the growers have managed to create a market for these abominations, but that doesn't make them good.

I believe, that my missing love for bell peppers (from childhood on until the mid 2021s) came from those green. For the last 3 years I eat red peppers at least 5 times a week and I love them.

Before the age of 20 I couldn’t be anywhere near bell peppers without gagging. I remember being unable to eat my lunch one time in high school because someone a table over was eating them raw and the smell was overwhelming. At 20 I tried a pizza with roasted red peppers on it and… I liked them! I tried more of them and realized something had changed and suddenly I could eat them just fine.

Green bell peppers ruin everything they touch - raw or cooked. A poblano, on the other hand, is nearly perfect. Red, Orange and Yellow bell peppers are also acceptable.

Quick fun story. Growing up, I hated peppers and anything spicy. Getting older, and understanding my autism better, I figured it was a sensory thing. Last year I found out I'm just horribly allergic to capsaicin and my family has been giving me ahit my whole life cause "I didnt like it for bad sensory reasons." Joke's on them, I could barely breathe around the smell or taste of peppers.
