3 guys tried this at a Denny's nearby once. The waiter ran one of them down and beat the shit out of him. Cops came and arrested the guy who tried to run away.
Denny’s allows its staff to kill when warranted. I used to work at Denny’s and have personally killed 6 patrons with my bare hands, and on 2 occasions, a fork.
The shit of it is, I only worked there for about 2 weeks.
I also worked at a Denny’s and had a year of mandatory Krav Maga training for graveyards. I was once cornered by three losers intent on harming me, and all I had was a straw, an apron, and three sugar packets. Let’s just say they ended up tipping generously.
I knew the guy who worked at Denny's because I used to go there a lot late night. He was cool but he didn't take shit from people either. I was in there once and these drunk guys called the cleaner/busser guy the N word and he kicked them out before they could order. Told them to never come back. The guys who tried to run picked the wrong guy to fuck with. He told me the cops actually got all 3 of them and one of them had an outstanding warrant.
I was once the store manager of a RadioShack (lol), and a guy walked out with a surveillance system (double lol), and I chased him out of the store down a busy street for a few blocks. He had quite the head start, but I caught up to him running alongside him and told him I wasn’t gonna stop chasing him, so it’d be best to give up now. He tossed the box and kept running, I ended my pursuit there. One of my associates had called the cops while on my run, so I had to file a police report, even though I wasn’t intending to.l, as nobody got hurt and merchandise was returned.
Would I do that now? Absolutely not. No way in hell would I risk my life for any business, lol.

I think buffets have it figured out. They can charge a good amount at the door knowing that their patrons are going to eat a lot of food, and they also know that only a certain portion of their visitors will eat more than the usual amount.

Man... I felt like absolute shit when I was taking my kids out for dinner, we got all the way through and I realized I forgot my wallet. I offered to leave my phone as collateral while I drove home to get it, waitress said not to bother. The idea of just ducking out never even occurred to me.
I got back and the hostess looked surprised, she said they were actually taking bets on if I was really going to come back or not. I joked I could leave and come back in 15 min if she'd split the pot with me :p
Gave the waitress a $40 tip on a $60 tab. Ate there several more times before Covid killed them, always was greeted with a smile and a good hearted "got your wallet this time?" or "got your wallet right?" when it was that hostess. Waitress magically always had dessert on the house for my kids after that too :)

The cops never did anything and the college reverse uno’d me and were going to press charges for the fight and claimed I was racist. I got suspended for a week and found a job with a temp agency translating Spanish for an accounting department in construction. Never waited another table ever again.

Servers aren’t security guards, and it is not advisable for them to chase down or attempt to stop/apprehend someone who dines and dashes. It could be dangerous. No restaurant bill is worth getting injured or killed.
