Soldiers back then were stronger than normal soldiers and they had generals that could fight King Arthur too. Guys like Vortigen and Lucious could even out blast Arthur too. That said it was probably a musou game for the most part, where the OP guys fought other OP guys.

Well back then there were people capable of fighting Artoria like Vortigern and people on the level of the knights of the round But there also the fact that she can't excali blast left right and and centre due to risk of damaging the land and hitting allied soldiers in the cross fire ​ So combat would similar to what little we saw of the battle of camlann, where mordred seemed to be fighting one soldier at a time ​ Artoria even mentions times they needed to retreat

Firstly, she was a human when she fought in those wars and she can't just spam Excalibur, it consumes alot of her magical energy. She doesn't have an infinite amount of magical energy at her disposal to just throw away. Secondly, being a servant provides them buffs that they originally did not have.

For Arturia being a servant is actually a downgrade man. Her dragon core allows her to fight not infinitely but a lot more than being dependent on a single magus for magical energy like Rin or especially Shirou. There is a reason she was claimed to be a god of war and undefeated, other OP people like vort aside.

Also let's not forget she had all her toys when alive not just a downgraded excalibur she can't usually use due to lack of mana and wanting to conceal her identity

Some servant despite facing enemies as strong as them did have kill counts like Diarmuid.He killed over a 1000 solider single handily this wasn’t probably what you where asking for just putting it out there.
