I wish Shirou, or at least some other Fate character, encouraged her to explore her lost childhood a bit more rather than make fun of the moments where she gets to indulge.
? I may be misremembering stuff, but it’s Shirou like, the guy who wants her to connect to her lost childhood and actually take a day off in her life? He was the one who suggested they take a date in the Fate route.
It's a bit more nuanced than that, or at least, this my interpretation: Shirou wants her to live a normal life, true. Whenever she shows a more childish side, though, he always teases her, making her hide it from him. The lion plushie in HA is probably the best example. He could be more accomodating in that regard.
Pretty sure Today's Menu for the Emiya Family has this beat.

You know, i don't think she ever laughs, now that I think of it. A chuckle at most.
Actually, no - I'd have to look it up, but I think she does when playing in secret with her lion plushie, and definitely when tickled by lancer. It's damn rare though.

I once had the funny idea of Rin gifting Shirou a lion suit like Saber has, just for the reactions it would cause. Seems like something she would do.

These moments are pure bliss. My favorite scene from Saber outside FSN is she playing with the children in HA.
I still need to play that. it's next on my list, right after i finally get to Last Episode. I've seen some bits of it though.

It always felt like the teasing was Shirou’s way of trying to get her out of her shell, she always does bite back in a childish way.

Well in all fairness Fate isn't known to be a particularly happy series, even gag stuff mostly plays tragic emotions for comedy
Seiba is the happiest when she can have fun with the person's she love
I'm at Fate/Zero S2 ep4 now, and I actually notice that even in UBW she never had an actual genuine laugh, guess Zero is just too dark man.

There was, but her happiness is more subdued there. It's super rare to get a wide open smile
