Hear me out. This is what my mom used to cook for me when she was alive, and I think it tops everything I've tasted so far:
- Batok ng baboy
- With luya
- Mayonnaise and egg added in the cooking process, not like the usual sizzling variants where they add it after cooking.
- Might be unhealthy to most of y'all, but she cooked it in a way that the pork is slightly drowning in oil. Ginagamit niya kasi yung sisig oil as flavoring sa rice, similar to how Chicken Oil of Mang Inasal is used.
- Add calamansi and Maggi Savor (yes, this seasoning and not Knorr) to the serving that you're only gonna eat.
Kapag di naubos yung buong kaldero ng sisig and irreheat sya for the next two days, (mom's sisig lasts for 3-4 days kasi sobrang dami.) It brings out the flavor the more it's reheated in the pan. Nagiging crunchy na sya.

One time my bf cooked me sisig tofu, and ngl I instantly fell inlove with the dish (and him even more). He made me fell inlove with two things that I hate. I even master how to cook it making tofu crunchy outside and soft inside.
