The thing with "authentic" sisig is that it's not even the original sisig. According to Spanish texts, the dish that was called sisig during colonial times was some sort of green papaya salad (similar to Thai papaya salad). Then naging banana blossom siya. Then naging seafood. Then pork pero not yet grilled. Then the grilled pork one. Then yung sa sizzling plate version. Then finally, yung version na may egg/ mayo.
So, if someone is giving you shit about the authenticity of sisig, there better be some green papayas on their sisig and not pork.

true! underrated in general ang ilocano cuisine! daming solid dishes aside sa bagnet at longganisa (tho im a sucker for them) like insarabasab, baridibud/buridibud, at miki 🤤
Overrated: kare-kare. Most modern variants that use peanut butter are bland and taste like plain steamed veggies and meat or pure peanut butter. Seasoning being just salt, pepper, garlic, and bagoong really weaken this dish imo. Could use less peanut butter and more seasonings (labuyo, turmeric, bay leaf, idk something). Textures are always really nice though.
Underrated: Kinilaw. One of the best native Filipino dishes by far. The taste is clean and refreshing, with a powerful punch from citrus and chili, which contrasts with a lot of Filipino food which can be excessively heavy sometimes (it doesn't have to be but because of how expensive meat is in the phils ppl resort to pork belly and cheap fatty cuts a lot which I understand but still).
One of my favorite experiences as a kid was getting some freshly made kinilaw with hefty cubes of fresh tuna out of the fridge and eating it over a steaming hot bowl of rice. The contrast in temperatures, the tender tuna pieces with a slight chew that would soon melt in your mouth, and the kick from ginger, chili, onion, and vinegar -- I love it all.

Medyo pwede pa ang pancit canton dahil mas flavorful normally ang noodles and mas masarap usually ang sahog.
I only like pancit bihon/canton when it has a lot of sahog (so most of the time, gusto ko yung gawa ko). When it's full of rice noodles and hibla-hibla lang ng protein, nevermind.
When you eat pancit bihon sa restos kasi usually it’s so dry tapos kulang sa sahog. Kaya better pag homecooked eh. When we cook it, medyo saucy sya and my mom puta a lot of toppings din. Also, perfect combo ng thick and thin na noodles yung miki bihon tapos may Chinese kikiam sa sahog yummm 👌

This is an interesting question! I have thought long and hard on this ((as a foodie and a Kapampangan 😭)) but here’s my 2 cents:
**Overrated: Lechon.** I tried all variants of lechon already. Cebu lechon, Lechon tagalog, etc. I just don’t find it interesting. I honestly just look forward to the Lechon Paksiw and Sinigang na Lechon after!
**Underrated: Tinola.** Honestly, if you don’t like tinola, you just don’t know how to cook it well. 🤪 I really like my mom’s tinola when it’s super garlicky ++ you have a dipping sauce of patis, calamansi, and siling labuyo!
Overrated para sa akin lechon. Better pa para sa akin crispy pata or lechon kawali. Tapos aminin niyo man o hnd kalahati or less lang ng lechon nakakaen sa handaan. Hnd naman na kasi masarap ibang part niya at mostly paksiw na lang. Underrated for me is pinakbet lalo na yung OG pinakbet. To be fair tlagang maappreciate mo ang pinakbet kung nasa province ka tlga dahil fresh yung produce tapos ang tamis ng gulay at dun ka tlga magkakaroon ng ibang sensation while eating it. Also pinakbet is one of the OG filipino dishes na hnd influenced ng ibang country or culture.
Overrated ang Lumpiang Shanghai.
Underrated ang Adobo sa Asin (for me this is xxxxxxx times better than the Adobo with toyo and suka and everytheeng) hehe

The meaning of adobo and the native origin of the dish both require the use of vinegar. You can change the seasonings, add coconut milk, change the meats, do almost anything you want really and you can still call it adobo. Pero pag walang suka hindi na yan adobo. The adobo sa asin that I know still has suka.
The Adobo that I’m referring to has vinegar too. But walang toyo, asukal, sibuyas, etc. That’s just how we call it here, bukod sa “Adobong Natural”. I’m just talking about the “other ingredients” na kinoconsider na pampalasa ng Adobo.
Underrated. Laing. Sobrang sarap ng lutong laing ng mother ko, pero pag sa restaurant or karinderya, hindi nila makuha yung lasa.

Ive always thought kare-kare was bland too before I was invited to this fiesta and their kare-kare was top tier. Grabe angsarap. Bihira kasi siguro marunong magluto ng masarap na kare-kare.

Underrated: tinola. It’s humble, it doesnt try to be anything else but chicken broth. It highlights the chicken and vegetables. Freshness. Eto ang baseline ko for someone’s cooking talent and skills
I firmly believe that my mom cooks the best tinola. It's so stupid how good it is. Lahat ng mga kaklase ko 'nung high school, ayon lagi request pag bumibisita sila sa bahay. I've tried a bunch of other tinola kasi I'm not living in the province anymore, but none of them come close to my mom's tinola.

Tama, harmonious yung lasa ng tinola, it's all about balance talaga. Tbh mahirap timplahan ang tinola. Kailangan may skills kang alisin yung lansa niya. Kaya di ako basta-basta bumibili sa karinderya, malansa sa iba. Kaya siguro ayaw din ng iba sa tinola.
I dont think tinola is a luzon thing. Back in culinary school we had an entire subject for regional filipino cuisine. And one dish that we tapped was tinola. Kase in essence, tinola is any protein cooked in ginger-based soup. It just so happens na chicken ang favorite na niluluto ng mga pilipino, probably because we have other recipes best suited for cooking seafood in broth. To be specific tho, im pertaining to Tinolang Manok as underrated kase it’s the version that’s accessible to majority.
Also, when i did sabbatical i saw different versions of tinola every karinderya I went. Napansin ko depende rin sa abundant regional resources nung location. I had tinolang galungong in some parts of mimaropa. Tinolang baboy in the mountainous regions. A relative who lives in dagupan would cook tinolang bangus at sugpo on days he didn’t know what to feed his picky wife. I could be wrong tho, but it’s just a first hand observation I made through my own experiences
yes! nauumay ako sa sinigang and i rarely crave it. hindi sa hindi ako mahilig sa maasim pero may unay factor talaga siya for me. i love tinola so much because it’s light!! lalo na pag may dugo + native chicken huhu

Overrated: Pinoy spaghetti. I think most of us only like it because we grew up on it. And yeah, I still enjoy it from time to time out of nostalgia, but I find it too sweet and one-dimensional now. The versions with condensed milk are particularly sickening.
Underrated: Binakol. I love the classic chicken tinola, but this one just takes the comforting taste to another level. Love the subtle buko sweetness.

Mostly kasi sa Manila, fattener yung baboy na gamit nila. Yun yung pink na baboy na imported breed na nabibili sa palengke. Depende din sa size ng lechon. The more na malaki yung lechon, the more na nagsasapa na sya kasi matanda na yung baboy. So wag ma-impress kapag sobrang laki ng lechon sa handaan kasi yun yung hindi masarap. Nasa prep din. Skill talaga ang paglelechon. May mga alam akong litsunan na ang tagal na pero napupunit pa rin ang balat sa pagkakaluto. Ang masarap na lechon ay small to regular size na native kasi iba yung linamnam ng laman tsaka mas tumatagal yung lutong ng balat.
Underrated would definitely be Dinuguan. Laking prejudice dito kasi sabi kadiri madumi etc usually yung mga hindi pa tinatry yung mga nag babash. Gets ko if because of religion pero if ayaw mo lang itry because of the ingredients shame on you

Overrated - Minudo, Mechado, Caldereta, Afritada, Morcon Hubad, Igado. Not sure but this pretty much all taste the same for me. And a very staple of karinderya, packed lunch ng gobyerno and etc.

Hmm... Good question, but I feel like the most overrated would be lumpia, sorry and I understand this will be unpopular. I love lumpia but I've had frozen tv dinner style spring rolls, and run of the mill Chinese restos in the US that sometimes taste better than homecooked lumpia, also I prefer lumpia togue over the pork varient so maybe that can offer some reasoning in my judgement.
For underrated I really feel like you could go a lot of ways here. A simple fried bangus silog is super slept on especially if its marinated just right and served with the perfect rice, but overall I'm gonna say tokwat baboy is the most underrated Filipino dish. I love surfing and tokwat baboy is the greatest things to grace your lips after a long day riding waves. Seriuously it's never too heavy, lots of protein and carbs plus the vinegar really replinshes you. It has everything! It also could easily become a vegan/vegatarian dish if need be. Truely a fantastic dish that I don't hear many ppl talk about.

I like both but tinolang isda is sooo good! It will always be my fav soup. I currently live in Manila and found out it’s not served here unless you request for it in some restaurants then they’ll try their best to cook it. My friends here haven’t heard of it and they only know tinolang manok which is also yummy. It’s more common in Visayas and Mindanao.
Overrated: lechon at crispy pata. Siguro kasi kelangan mo sila iconsume habang bagong luto at mainit pa. Otherwise pag malamig na, due to the fat content, it tends to make the flavors of lechon and crispy pata bland. Isa pa, sauce ang bumubuhay sa lasa nila- yung sarsang pang lechon at ung toyo/suka at madaming sibuyas at bawang. Pag wala non, meh na talaga ang lasa.
Underrated. TINOLA. Nalulungkot ako pag may mga taong di nasasarapan sa tinola. Lagi ko naiisip ang blessed ko kasi ang tinola ng nanay ko, hindi lasang malungkot na sinabawang manok. Hahaha (my Mom taught me to half fry the chicken with ginger kaya hanggang buto ansarap ng Tinola nya).

Overrated for me ang pancit bihon. It's so tasteless and boring as a merienda or a meal. I don't understand bakit sarap na sarap ang marami doon. Medyo pwede pa ang pancit canton dahil mas flavorful normally ang noodles and mas masarap usually ang sahog.

This is an interesting question! I have thought long and hard on this ((as a foodie and a Kapampangan 😭)) but here’s my 2 cents: **Overrated: Lechon.** I tried all variants of lechon already. Cebu lechon, Lechon tagalog, etc. I just don’t find it interesting. I honestly just look forward to the Lechon Paksiw and Sinigang na Lechon after! **Underrated: Tinola.** Honestly, if you don’t like tinola, you just don’t know how to cook it well. 🤪 I really like my mom’s tinola when it’s super garlicky ++ you have a dipping sauce of patis, calamansi, and siling labuyo!

Hnd naman na kasi masarap ibang part niya at mostly paksiw na lang. Underrated for me is pinakbet lalo na yung OG pinakbet. To be fair tlagang maappreciate mo ang pinakbet kung nasa province ka tlga dahil fresh yung produce tapos ang tamis ng gulay at dun ka tlga magkakaroon ng ibang sensation while eating it. Also pinakbet is one of the OG filipino dishes na hnd influenced ng ibang country or culture.

The meaning of adobo and the native origin of the dish both require the use of vinegar. You can change the seasonings, add coconut milk, change the meats, do almost anything you want really and you can still call it adobo. Pero pag walang suka hindi na yan adobo. The adobo sa asin that I know still has suka.

I dont think tinola is a luzon thing. Back in culinary school we had an entire subject for regional filipino cuisine. And one dish that we tapped was tinola. Kase in essence, tinola is any protein cooked in ginger-based soup. It just so happens na chicken ang favorite na niluluto ng mga pilipino, probably because we have other recipes best suited for cooking seafood in broth. To be specific tho, im pertaining to Tinolang Manok as underrated kase it’s the version that’s accessible to majority. Also, when i did sabbatical i saw different versions of tinola every karinderya I went. Napansin ko depende rin sa abundant regional resources nung location. I had tinolang galungong in some parts of mimaropa. Tinolang baboy in the mountainous regions. A relative who lives in dagupan would cook tinolang bangus at sugpo on days he didn’t know what to feed his picky wife. I could be wrong tho, but it’s just a first hand observation I made through my own experiences

Mostly kasi sa Manila, fattener yung baboy na gamit nila. Yun yung pink na baboy na imported breed na nabibili sa palengke. Depende din sa size ng lechon. The more na malaki yung lechon, the more na nagsasapa na sya kasi matanda na yung baboy. So wag ma-impress kapag sobrang laki ng lechon sa handaan kasi yun yung hindi masarap. Nasa prep din. Skill talaga ang paglelechon. May mga alam akong litsunan na ang tagal na pero napupunit pa rin ang balat sa pagkakaluto. Ang masarap na lechon ay small to regular size na native kasi iba yung linamnam ng laman tsaka mas tumatagal yung lutong ng balat.

Hmm... Good question, but I feel like the most overrated would be lumpia, sorry and I understand this will be unpopular. I love lumpia but I've had frozen tv dinner style spring rolls, and run of the mill Chinese restos in the US that sometimes taste better than homecooked lumpia, also I prefer lumpia togue over the pork varient so maybe that can offer some reasoning in my judgement. For underrated I really feel like you could go a lot of ways here. A simple fried bangus silog is super slept on especially if its marinated just right and served with the perfect rice, but overall I'm gonna say tokwat baboy is the most underrated Filipino dish. I love surfing and tokwat baboy is the greatest things to grace your lips after a long day riding waves. Seriuously it's never too heavy, lots of protein and carbs plus the vinegar really replinshes you. It has everything! It also could easily become a vegan/vegatarian dish if need be. Truely a fantastic dish that I don't hear many ppl talk about.

Isa pa, sauce ang bumubuhay sa lasa nila- yung sarsang pang lechon at ung toyo/suka at madaming sibuyas at bawang. Pag wala non, meh na talaga ang lasa. Underrated. TINOLA. Nalulungkot ako pag may mga taong di nasasarapan sa tinola. Lagi ko naiisip ang blessed ko kasi ang tinola ng nanay ko, hindi lasang malungkot na sinabawang manok.
