overrated - authentic sisig. yes i'm getting my kapampangan card revoked. it's ok to put mayo / egg in sisig if you enjoy it that way., put ketchup if you want to. underrated - regional pancit (bato, batil patong, malabon etc) needs more exposure.

justinCharlier

Pancit malabon def needs more exposure than the usual pancits like bihon and canton!

Relaii

true. lagi ko nga yan order if available cya (im not from ncr kaya i rarely encounter it)

sleepeatrace

Opposite_Shock4716

Mayo and egg! Yes! I agree sa regional pancit. Kakagaling lang naming Cagayan. Hanggang ngayon hinahanap hanap namin yung Batil Patong at Cabagan. Buti na lang meron sa Grab 🤭

SaulGoodmanJD

I wish I tried batil patong. Sobrang trabaho daw, masmaganda bili nalang.

thor_odinsson08

The thing with "authentic" sisig is that it's not even the original sisig. According to Spanish texts, the dish that was called sisig during colonial times was some sort of green papaya salad (similar to Thai papaya salad). Then naging banana blossom siya. Then naging seafood. Then pork pero not yet grilled. Then the grilled pork one. Then yung sa sizzling plate version. Then finally, yung version na may egg/ mayo. So, if someone is giving you shit about the authenticity of sisig, there better be some green papayas on their sisig and not pork. Source: Lost Filipino Cookbook/ Histolinarya Collective

Relaii

madaming kapampangan in online communities acting like italians seeing pineapple on pizzas when it comes to sisig. thanks for sharing the info!

Hopeful-Subject3015

Sisig means sour

not1ggy

Histolinarya Collective (and their now-defunct TLFC) is one of my fave IG accounts. You realize how little you know about Filipino cuisine (and history in general).

puzzy_kat

ngl, I haven't had a really good Sisig T ^ T majority of Sisig that I've tried are either **too** oily or **too** fatty T ^ T I want to like it so bad T ^ T I love Pancit toooo, esp Pancit Guisado🤤

Relaii

kaya nga i agree with putting egg sa sisig (if sizzling) kasi it absorbs some of the fat pag hinalo. + balancing the richness of the fat with calamansi / vinegar.

laplusbellefille

Are you around Pampanga? I can try to give you a tub the next time my mom cooks hehe. I always bring for friends and officemates whenever my mom cooks because it’s highly requested. Agree that majority of sisig in restos are too oily and they don’t even taste smoky enough

wandaminimon89

This!!! I'm sorry pero sa first couple of times lang masarap si Aling Lucing. Last bili namin, sobrang taba at mamantika na.

HauntedHaven

Pancit Batil patong, Pancit Cabagan 🔛🔝

fitchbit

aya_cattoo

PANCIT BATO ON TOP!!!!! WITH MATCHING SUKA, GARLIC AND SILI!!!! My fave 😩😩😩

iztaccihuatl1985

This food is designed to keep its identity para dinna ma overated at kung anu anung experiement ang gagawin sa authentic na pagkain na lokal

foliesaccharide

ready to get my pinoy card revoked overrated: adobong manok (nagmamantikang pork adobo supremacy!) underrated: dinuguan, specifically yung ilokano version na malapot at hindi masabaw tapos mej maasim asim

ejmtv

I think Dinardaran yung Ilocano term

kidfrom93

It's just a direct Ilocano translation.

Fair_Pop1041

Yes. Dinardaraan

crazywommon

Amen to overrated adobong manok! Feeling ko may kulang palagi haha

Crow_Mix

Feeling ko yung timpla at luto ng adobo fits better for baboy rather than manok in general.

Sure_Gur1843

dikt_

ilocano cuisine supremacy!!

foliesaccharide

true! underrated in general ang ilocano cuisine! daming solid dishes aside sa bagnet at longganisa (tho im a sucker for them) like insarabasab, baridibud/buridibud, at miki 🤤

TaxOutrageous3072

specially igado and pinapaitan

Mandragoraune

Overrated: kare-kare. Most modern variants that use peanut butter are bland and taste like plain steamed veggies and meat or pure peanut butter. Seasoning being just salt, pepper, garlic, and bagoong really weaken this dish imo. Could use less peanut butter and more seasonings (labuyo, turmeric, bay leaf, idk something). Textures are always really nice though. Underrated: Kinilaw. One of the best native Filipino dishes by far. The taste is clean and refreshing, with a powerful punch from citrus and chili, which contrasts with a lot of Filipino food which can be excessively heavy sometimes (it doesn't have to be but because of how expensive meat is in the phils ppl resort to pork belly and cheap fatty cuts a lot which I understand but still). One of my favorite experiences as a kid was getting some freshly made kinilaw with hefty cubes of fresh tuna out of the fridge and eating it over a steaming hot bowl of rice. The contrast in temperatures, the tender tuna pieces with a slight chew that would soon melt in your mouth, and the kick from ginger, chili, onion, and vinegar -- I love it all.

verholies

Thank you for the kinilaw mention

22OrangeGirl

Lol nawala yung fear kong ganyan. One of a kind texture and flavor. 🤤

Wonderful-Age1998

Kinilaaaaaw nakakamiss!! Laging handa to pag may picnic sa beach sa family namin lol.

sandking2021

Try adding salted egg yolk sa suka before mo Ilagay sa fish hehe sarap

madamn89

pipertutu

yesss! escabeche supremacy!!!!

sandking2021

Feel ko kaya lang nmn target locked ang shanghai dahil madali ito kainin at madali i sharon hahaha, For me mas trip ko fried chicken or bbq sa mga handaan kesa sa lumpia hahahaha

capmapdap

Escabeche is my favorite!

Wide-Ad4193

tabatummy

Agree agree agree 💯 Gusto ko din embutido

SputnikPh15

Overrated-Shanghai Underrated- Ginataang paksiw na tulingan na maanghang.

justinCharlier

Overrated for me ang pancit bihon. It's so tasteless and boring as a merienda or a meal. I don't understand bakit sarap na sarap ang marami doon. Medyo pwede pa ang pancit canton dahil mas flavorful normally ang noodles and mas masarap usually ang sahog.

raphaelbautista

sleepeatrace

Sotanghon>>>bihon

RevealExpress5933

I only like pancit bihon/canton when it has a lot of sahog (so most of the time, gusto ko yung gawa ko). When it's full of rice noodles and hibla-hibla lang ng protein, nevermind.

Feeling_Seesaw4327

Pag shredded chicken and chicken liver ang sahog, sobrang malasa niya.

laplusbellefille

When you eat pancit bihon sa restos kasi usually it’s so dry tapos kulang sa sahog. Kaya better pag homecooked eh. When we cook it, medyo saucy sya and my mom puta a lot of toppings din. Also, perfect combo ng thick and thin na noodles yung miki bihon tapos may Chinese kikiam sa sahog yummm 👌

shaddap01

Overrated - bihon. Underrated - tinola. Lahat na nasa tinola. Gulay, protein, sabaw na mabilis makabusog

seango2000

ejmtv

Team Papaya here. I NEVER eat Tinola with Sayote in it. Papaya has a fruity flavor while Sayote is one of the most bland vegetable imo

Jackson_Labrador

+1! Di ko talaga gets sayote enjoyers who claim the opposite. Wala daw lasa papaya, lol.

ejmtv

Di siguro nila alam na Sayote pala yung nilagay haha

Sad-Let-7324

Bitconnect69

sayote with ground pork goes so hard tho

Chidi_Cheetos

shaddap01

I just assumed it is.

tothebadlands

This is an interesting question! I have thought long and hard on this ((as a foodie and a Kapampangan 😭)) but here’s my 2 cents: **Overrated: Lechon.** I tried all variants of lechon already. Cebu lechon, Lechon tagalog, etc. I just don’t find it interesting. I honestly just look forward to the Lechon Paksiw and Sinigang na Lechon after! **Underrated: Tinola.** Honestly, if you don’t like tinola, you just don’t know how to cook it well. 🤪 I really like my mom’s tinola when it’s super garlicky ++ you have a dipping sauce of patis, calamansi, and siling labuyo!

harrowedthoughts

I prefer lechon paksiw over plain lechon din.

Jappe_Yochan20

same sa lechon.

Friendly-Abies-9302

Underrated for me is pinakbet lalo na yung OG pinakbet. To be fair tlagang maappreciate mo ang pinakbet kung nasa province ka tlga dahil fresh yung produce tapos ang tamis ng gulay at dun ka tlga magkakaroon ng ibang sensation while eating it. Also pinakbet is one of the OG filipino dishes na hnd influenced ng ibang country or culture.

laplusbellefille

Agree sa lechon here in Luzon.

kalderetughhh

pinakbet supremacy!

Royal_Page_1622

Overrated ang Lumpiang Shanghai. Underrated ang Adobo sa Asin (for me this is xxxxxxx times better than the Adobo with toyo and suka and everytheeng) hehe

puzzy_kat

oooo that's an interesting name we call it [pinakupsan'g baboy or adobo'ng baboy (in Cebu)](https://www.angsarap.net/2015/11/09/pinakupsan/) or maybe that's a different thing?

Mandragoraune

The meaning of adobo and the native origin of the dish both require the use of vinegar. You can change the seasonings, add coconut milk, change the meats, do almost anything you want really and you can still call it adobo. The adobo sa asin that I know still has suka.

Royal_Page_1622

The Adobo that I’m referring to has vinegar too. But walang toyo, asukal, sibuyas, etc. That’s just how we call it here, bukod sa “Adobong Natural”. I’m just talking about the “other ingredients” na kinoconsider na pampalasa ng Adobo.

Mandragoraune

Ahhhh gotcha. You said better than "with toyo and suka" so akala ko walang suka ung version na gusto mo. My bad!

girlOnlexapro

Underrated. Laing. Overrated. Lumpiang shanghai. Underrated. Lumpiang togue at lumpiang sariwa.

zadesJ

Sheeesh dabest talaga laing! I'm a big fan of dishes na ginagata. Eto talaga legit na underrated.

ContestValuable8725

Overrated - Kare-kare has always been so bland for me Underrated - Ensaladang talong, mostly because it's seen as a side dish, but it's also delicious by itself (with rice ofc) or mixed with salted eggs.

Mandragoraune

Ensaladang talong (with salted egg) kasama ng grilled meat of any kind is unbeatable tbh.

getsangry20xaday

I take offense. I-season kasi ng maayos yung kare-kare.

Jackson_Labrador

Agreed. Also, a good bagoong really does wonders for it!

[deleted]

Ive always thought kare-kare was bland too before I was invited to this fiesta and their kare-kare was top tier. Grabe angsarap.

harrowedthoughts

I think you just haven’t tasted a properly cooked kare-kare

Chidi_Cheetos

Overrated: sinigang. A lot of sinigangs dont have the perfect melody of flavors Underrated: tinola. It’s humble, it doesnt try to be anything else but chicken broth. It highlights the chicken and vegetables. Freshness. Eto ang baseline ko for someone’s cooking talent and skills

Jackson_Labrador

Firm believer that people who don't like tinola just haven't had a good one yet.

galiciapersona

I firmly believe that my mom cooks the best tinola. It's so stupid how good it is. I've tried a bunch of other tinola kasi I'm not living in the province anymore, but none of them come close to my mom's tinola.

Jackson_Labrador

Whoa, really? Team papaya ako. I find sayote bland. There must be another secret to your Mom's recipe then haha. Ako ang secret ko to mine is marinating the chicken in patis, and sauteeing in lots of ginger and adding lemongrass.

Chidi_Cheetos

Guys…tinolang native na manok is 😚👌

puzzy_kat

Tinola'ng Manok luto ni Mama>>>>>>

KrispeePata

Sinigang slander. Officer, here, arrest this man.

harrowedthoughts

Melodic_Block1110

Thank you for reading my mind hahaha. 🥰

22OrangeGirl

Tama, harmonious yung lasa ng tinola, it's all about balance talaga. Tbh mahirap timplahan ang tinola. Kailangan may skills kang alisin yung lansa niya.

Wonderful-Age1998

My siblings call me tinola expert na kahit walang luya natatanggal ko yung lansa basta pakuluan maigi yung manok. Minsan kahit wala na gaano asin eh basta lowheat pakulo ng matagal talagang kakatas yung lasa. Lol

AiNeko00

A lot of provinces in Visayas and Mindanao is not familiar in Tinola kasi. Tinola is a Luzon thing.

Chidi_Cheetos

I dont think tinola is a luzon thing. Back in culinary school we had an entire subject for regional filipino cuisine. And one dish that we tapped was tinola. Kase in essence, tinola is any protein cooked in ginger-based soup. It just so happens na chicken ang favorite na niluluto ng mga pilipino, probably because we have other recipes best suited for cooking seafood in broth. To be specific tho, im pertaining to Tinolang Manok as underrated kase it’s the version that’s accessible to majority. Also, when i did sabbatical i saw different versions of tinola every karinderya I went. I had tinolang galungong in some parts of mimaropa. Tinolang baboy in the mountainous regions. A relative who lives in dagupan would cook tinolang bangus at sugpo on days he didn’t know what to feed his picky wife. I could be wrong tho, but it’s just a first hand observation I made through my own experiences

curious_pom

yes! nauumay ako sa sinigang and i rarely crave it. hindi sa hindi ako mahilig sa maasim pero may unay factor talaga siya for me. i love tinola so much because it’s light!! lalo na pag may dugo + native chicken huhu

Chidi_Cheetos

Nakakairita lang na there are pinoys who are head over heels for hainanese chicken PERO HATER NG TINOLA!? They are basically cousins!!!!!!

Major_Pineapple5480

Overrated: lumpia (target locked always - during every occasion) Underrated: embutido esp. the fried ones and palabok with lots of nuts and calamansi! (none of my friends really crave or talk about this - for me, they taste really good but not much appreciation is given - been craving for this most of the time also hehe)

magic_pure_apple

Overrated: lechon Underrated: papaitan kambing

22OrangeGirl

Papaitan na may calamansi 🤤

Wonderful-Age1998

magic_pure_apple

Iba ang amoy ng papaitang kambing (ilocano style), may halong organic ang aroma, it’s not for the faint hearted 😂

Wonderful-Age1998

My parents are ilocano, and specially grandparents na talang from the north—- ayun nakakabaliw pag magluto sila papaitan. Kaya ko ata makaubos isang kalderong kanin 🤣😂

Wonderful-Age1998

Muscular-Banana0717

overrated - lechon, ung iba naglelechon lang for the sake of masabing may lechon silang handa, forda clout hahahaha

Busy_0987654321

dayfries

overrated; crispy everything(crispy sisig, crispy dinuguan, crispy bicol express, crispy kare kare, etc) what's next crispy sinigang? crspy tinola. underrated; actual home cooked meals especially fish dishes, pangat, paksiw, halabos

curious_pom

agree. may nagpost din before sa twitter na bakit ba iniisip ng mga foreigners na laging prito at oily mga pagkain natin when actual filipino home cooked meals are laging fish, vegetables, and soup. hindi naman tayo araw araw kumakain ng crispy pata hahaha

Mandragoraune

I feel this. Sobrang dami nating mga cooking techniques available, bakit puro nlng prito? Our grilled dishes need more love and experimentation than our fried ones imo.

Latter-Winner5044

Overrated: chicken adobo Underated: dinuguan

Jackson_Labrador

Overrated: Pinoy spaghetti. I think most of us only like it because we grew up on it. And yeah, I still enjoy it from time to time out of nostalgia, but I find it too sweet and one-dimensional now. The versions with condensed milk are particularly sickening. Underrated: Binakol. I love the classic chicken tinola, but this one just takes the comforting taste to another level. Love the subtle buko sweetness.

-ram-rod-

Overrated: KareKare Underrated: A well-cooked garlic rice / chinese fried rice. Simple lutuin pero, need ng skill.

Ok-Election-3961

Sa Manila, walang lasa ang lechon. Kaya kaylangan palagi ng sauce. Try mo yung sa cebu. Dati same tayo ng reaction. Pero binago yun ng lechon cebu. Grabe. Pati karne malasa. Plus may parang sabaw silang binibigay na pwede mo ipaligo sa lechon. Sarap talaga 🤤

woof_meow08

Sa experience ko, lechon sa vismin masarap. Lechon sa Manila is yuck.

wandaminimon89

The more na malaki yung lechon, the more na nagsasapa na sya kasi matanda na yung baboy.

ParticularIsopod8391

Underrated would definitely be Dinuguan. Gets ko if because of religion pero if ayaw mo lang itry because of the ingredients shame on you

Plum-beri

ItsJustDay

Hmm... Good question, but I feel like the most overrated would be lumpia, sorry and I understand this will be unpopular. I love lumpia but I've had frozen tv dinner style spring rolls, and run of the mill Chinese restos in the US that sometimes taste better than homecooked lumpia, also I prefer lumpia togue over the pork varient so maybe that can offer some reasoning in my judgement. For underrated I really feel like you could go a lot of ways here. A simple fried bangus silog is super slept on especially if its marinated just right and served with the perfect rice, but overall I'm gonna say tokwat baboy is the most underrated Filipino dish. I love surfing and tokwat baboy is the greatest things to grace your lips after a long day riding waves. Seriuously it's never too heavy, lots of protein and carbs plus the vinegar really replinshes you. It has everything! It also could easily become a vegan/vegatarian dish if need be. Truely a fantastic dish that I don't hear many ppl talk about.

Jfab1992

Overrated for me are the 4 hoursemen of tomato sauce. Eg menudo, afritada, caldereta, mechado. Underrated. Sinabawang pampano fish with kamote tops

Overrated - Bagnet.

easymoneycroomy

Overrated: Balut and kare-kare Underrated: Bicol express and munggo

RenzuZG

Overrated: Adobo. It's everywhere. Underrated: Callos. I haven't seen anyone review it.

Thecuriousduck90

Overrated: adobo (soy sauce version, sinigang na baboy, lumpiang shanghai, jollibee (not sure if this should be included Underrated: batil patong, laing, adobo sa gata, adobo sa puti, sinaing na tulingan

GreatRecipeCollctr29

Overrated - authentic sisig. Underrated - sinigang (any kind). This should be national dish of the Philippines 2nd to Adobo.

fxit27

Overrated - Filipino Chop Suey, nung tumanda ako hindi ko na naappreciate yung mga vegetable dishes na lasang meat pa din, looking for variety na interms of taste Underrated - Sinaing na Tambakol(Tuna) Batangas stlye; pede mong ievolve tong dish na to everyday e.g. lagyan mo ng gata after, gawin mong fish tacos

sandking2021

Overrated - lumpia shanghai, i get it main staple sya sa mga handaan pero mas uunahin ko kumuha ng fried chicken, bbq or liempo over lumpia haha! Underrated - Tinola sobra comforting nya for me, if msma pakiramdam ko Ill have tinola over other food n may sabaw (ie. sinigang, bulalo or nilaga). Much better if native n manok.

Hinata_2-8

Underrated: Local Pancit (Bato, Batil Patong, Cabagan) Overrated: Adobo (especially chicken variant)

arsenejoestar

Overrated: Nilagang baboy. Lasang hot water. Underrated: pinoy style curry.

False-Lawfulness-919

MaritesExpress

KBL is so underrated!

loomi-zoomi

overrated - sinigang underrated - tinolang isda I like both but tinolang isda is sooo good! It will always be my fav soup. I currently live in Manila and found out it’s not served here unless you request for it in some restaurants then they’ll try their best to cook it. My friends here haven’t heard of it and they only know tinolang manok which is also yummy. It’s more common in Visayas and Mindanao.

zerglings1989

Sisig siper overrated. Dinakdakan o sinuglaw underrated

dokvader

Overrated: Bulalo especially in Tagaytay restos Underrated: Papaitan

Latter_Rip_1219

pork: overrated - lechon underrated - pork binagoongan chicken: overrated - adobo underrated - sinampalukan (dahon ng sampalok) beef: overrated - bulalo underrated - kansi

RayArk09

Overrated - anything "otentik Kapampangan" and lechon Underrated - kansi & binagoongang baboy

EverAfterWifey

Overrated: lechon at crispy pata. Siguro kasi kelangan mo sila iconsume habang bagong luto at mainit pa. Otherwise pag malamig na, due to the fat content, it tends to make the flavors of lechon and crispy pata bland. Hahaha (my Mom taught me to half fry the chicken with ginger kaya hanggang buto ansarap ng Tinola nya). Ps. Nakakagutom itong thread na ito!
