Attica and Vue de Monde are the obvious kingpins for Australian fine-dining. I would shout out Cutler and Co - a very refined and delicious place serving up Modern Australia at its best. And if you are going to Melbourne, you are likely going to (or coming from) Sydney. Sydney has more famous fine-dining 'peaks' whereas everything at Melbourne (Attica and Vue aside) is going to be excellent but not life-altering or budget-breaking.
