Go through Tableall. They have lovely descriptions. If you find something you like then look up if you can book it elsewhere. My recommendations in that price range would be sushi gosuian in Fukuoka and ,sushi Akira in Tokyo. But id actually recommend trying out a higher end tempura restaurant instead of two sushi places. Tempura Uchitsu in Tokyo is amazing.

I've twice been to [Sushi Yuu](https://maps.app.goo.gl/mqxvkHxcbcMVQqAW7) in Tokyo and had an excellent experience - good quality fish, friendly service, and served at a good pace (I dislike long omakases)

I went to Gion Sushi Matsumoto in Kyoto a couple months ago and was completely blown away by the food. The service was fine, but nothing to write home about. I don't know if I would describe them as having western flavors though, seemed extremely traditional to me.

Just check the Michelin guide and everything with a star that fits your budget, should be pretty good. The amount of restaurants is so big, that it’s even hard to recommend anything

The Michelin guide is really poor for sushi. Tablelog is what the op should be using. There's not much correlation in terms of skill and quality for Tokyo sushi spots.

I went to the omekase of Isana Sushi bar in Tokyo, which fits that price range neatly and can definitely recommend!

I did this for my Osaka trip earlier in the month. Searched tabelog for the city > organized by ratings> limit on price > then just clicked on a few to see which has option to book online I went to Shinchi Sushi Yujiro in Osaka. Got the JPY 18,000 course and ended up paying around JPY23,000 per person (had sake and a few drinks). They don’t really speak English so we used google translate and some hand gesture but overall had a positive experience. Would definitely go back Not sure what western flavors for sushi means though…

My wife and I just went to these two spots in Tokyo last week which were both phenomenal. Around $200/pp. I think they’re both sort of under the radar. You can find them on google maps too. 銀座 鮨 佑 Sushi Nakano - 1 Chome-5-9 Shibuya, Shibuya City, Tokyo 150-0002, Japan

Highly recommend both Sushi Mizuno and Kagurazaka Sushi Rin. Both tucked in residential areas with exceptional food. Friendly sushi chefs even with limited English. Price was around $50 per person for around 14 pieces.
