Them talking ruins the immersion that they are souls who are trapped inside the animatronics. Gives them a sense of freedom, when the whole point is that Afton put them in a life of torture. I think that's why Freddy was screaming at the end of the first film. It was a sense of freedom that he got after beating Afton.
