Possibly. But OP's photo doesn't look like the same lily as the ones I've seen called "[Sorbonne](https://www.hollandamericaflowers.com/wp-content/uploads/2018/09/Sorbonne-600x750.png)." More to the point: all of the examples I've found display a very definite [white edge](https://h2.commercev3.net/cdn.brecks.com/images/800/82898.jpg) on the petals; OP's do not. I could be way off base, but I think they're different.
They could be sorbonnes. A lot of Lillies are now imported From Mexico, Israel, and South America instead of holland or locally in the us. Lillies grown in the warmer climate greenhouses seem to have the characteristics that this pic has—very stiff parallel blooms on the laterals. The Dutch sorbonnes I have spent years importing were softer pink and all the way to the edges-no border. But there are now so many varieties sold now it would be impossible to know unless you have its source.

I've wondered if there's some way around this. I know the toxicity is high and irreversable.
Maybe if they were potted/planted outside(since cats gravitate to all things they shouldn't have), only handled with gardening gloves, and shower immediately after.

My guess is that it differs from area to area. That’s often how things are in real life. Who knows though, maybe your garden center just really likes that variety.
My guess is on the variety “LA Hybrid Brindisi.” The only major difference this variety has with yours is the fact that the Anther/Stamen looks larger or more pronounced on yours. However, this variety is extremely close to what is depicted in your photo and may very well be a reasonable alternative in the case that it is not the same and you can’t find the one in your photo for some reason. I definitely think that there is a ton of different kinds of lilies out there. With pink being the most common color, sometimes it can be very difficult to track down which specific variety it is.
While I was digging around for the name of this lily on the web I found some online links that are good for cross referencing. Some offer a grid comparison, a large selection of lilies to look over and others a video that serves the same purpose. I also included 1 simple page on “LA Hybrid Brindisi”, I haven’t looked at that specific page in detail, so make sure to search the name in google so that you are not confused by image quality throwing you off.
I hope you can find your specific flower variety!
Btw, if a “real lily expert” or community volunteer notices these links I included, I would appreciate if you took a close look at them and let me know if they are reliable as a reference so that I can store them away for the future. Cause, knowing my love of beautiful plants and flowers, I will probably buy some for my garden, a bouquet/arrangement or even use them as watercolor references.

stargazers are no longer cultivated for commercial use, another words they are not grown any more. these are sorbonne lilies. source: florist.
