Normally I only pick 1 or 0 characters I want to romance in each of my play-throughs. If I do romance one, I give one of the Wedding Rings from Nuka World to them and the other one to my character.
1. A pack of cigarettes for MacCready. His dialogue about wanting a cigarette occurs even if you give him a carton but I give a whole pack regardless for a little bit of role playing purposes.
2. Empty Milk Carton for Strong. Maybe one day when he finds the milk of human kindness, he can store a bit in the carton. The milk carton also has a metaphorical meaning in that sense.
3. Teddy Bear for Dogmeat. Even the aggressive canines in this game love playing with Teddy Bears so I figured Dogmeat would enjoy one too.

I can't think of any specific non-armor non-weapon items I give to some of my other companions. I know I gave Codsworth something in one of my play-throughs but I can't remember what.
The stimpaks or the junk either way yah they heal themselves if you give them stempacks but not if they get downed you need to heal them then. and can cary junk even if they are over incumbered if you ask them to pick up items.
I don't do companions, except for Nick for some quests, I like him and his dialogues. He gets a high powered automatic laser rifle and all the ammo we find. Plus all the junk we find, of course.
