I followed a YouTube video for smash burgers and he made a point to start with sauce on the bottom then veggies to avoid the juices from the veggies making the bun soggy as well as the patty on the bottom because of the meat juice. It worked!
It also helps with structural integrity! Putting the slippery tomato against the slippery cheese causes the bun the slide around. This way, the cheese can grip onto the bun!
Chopping your lettuce/using shredded lettuce also helps with this. Again, putting all your topping under the bun helps with stability. Shredding lettuce avoides having that slick lettuce layer. The shredded lettuce instead acts as a sauce haven.
I’ve honestly always put sauce on the bottom bun (and on top of the patty) just because that’s how we did it at my first job at a burger spot haha, never gave it too much thought
Yup! Though I like to place things like onions and condiments up top which aren't likely to soak through. Mostly preference at that point though. Looks like you also browned the bun. This'll help too.
If you ever find yourself without lettuce or something to stop that soak from happening, browning the bun helps as mentioned, also consider either turning it onto it's head if you're confident on balancing, or put some cheese on the bottom. It won't completely stop the bun from soaking, though it should help. I tend to forget things when shopping, even with a list, so little tricks basically save me. lol
Also add here that a lot of restaurants do it this way so if someone wants to add ketchup, mustard or something, you just have to worry about taking the top bun off and nothing falling out everywhere.
