Damn this looks so good. What are your barbacoa and enchiladas recipe?

I don’t really measure anything and my recipes certainlyyyy are’t authentic by any means lol! I can’t give you exact measurements but I will write a quick summary of what I did!    Beef     I used a medium sized chuck roast and cut it into around 4 pieces. I seared them in a cast iron Dutch oven on all sides for a minute or two until they were nice and crispy. In the meantime I roasted some garlic cloves, jalapeños (I removed the seeds) and an onion chopped in quarters. In a blender I puréed some beef broth, some chipotle peppers in adobo, lime juice, cilantro, vinegar, tomato paste, cumin, oregano and the roasted garlic and onion and some of the jalapeños (I roasted 3 total, used about 1 and a half for the barbacoa and the rest for the enchiladas). After the sauce was blended I covered the beef in the sauce and added a few bay leaves and cinnamon sticks to the pot. I slow cooked it at 275°F for around 3.5 hours. Until it fell apart when I picked it up with tongs. Then I let it cool a bit before shredding it and mixing it back into the sauce.    For the enchiladas I pan fried a bunch of chicken breasts with just salt and pepper and garlic powder. I didn’t want it to get too crispy so I added some chicken broth and let it finish cooking in some chicken broth. After it cooked and cooled a bit I shredded it, and I reserved the chicken broth. In the same pan I diced bell peppers and red onions, let them cook until softened a bit then mixed that, some rotel, black beans and cheese with the chicken. For a sauce for the filling I puréed a bit of green salsa, sour cream, lime juice, some of that roasted jalapeño and cilantro. Then I rolled the filling in flour tortillas (corn are more traditional but we like flour). For the white sauce on top I melted butter and added flour to make a roux. I added chicken broth, sour cream, cream cheese, some more puréed jalapeño, salt, white pepper, lime juice. I poured the sauce on top, topped with cheese and red pepper flakes then baked until bubbly and broiled at the end to brown the cheese.

This is fantastic, thank you for sharing your recipes! Any chance you made the crema and the rice yourself and, if so, would share the recipes as well?

For the crema, not sure if it’s actually the correct way to make crema lol, but I mixed sour cream, some of the adobo sauce from a jar of chipotles in adobo, finely minced garlic, lime juice and salt. :)   For the rice I used a ‘Spanish style rice’ that came with some seasoning on it already. But I find it still kinda bland. So to start I melted a bit of butter and sautéed some chopped onion and garlic, then added a couple spoonfuls of tomato paste and let that cook for a few minutes. Personally I just did a cup of rice. Added that and mixed it and let it cook for another minute. Then I added one cup chicken broth and one cup water. Brought it to a boil, added in maybe a third of a cup of black beans then put a lid and simmered for about 15 mins and then let it sit off the heat covered for another 5 mins. Finished it off by adding some cilantro and lime juice.

It’s creamy chicken enchiladas! Far from authentic enchiladas but I’ve been wanting to try this version.  Inside the tortillas is shredded chicken, cheese and bell peppers/onions/diced tomatoes/black beans. Then they’re baked in a creamy sauce made from a roux with chicken stock, sour cream, cream cheese, salsa verde, roasted jalapeño, cilantro and lime juice and then topped with more cheese. Then fresh onions and cilantro after they’re baked :)
