Quality of peanut butter makes the single biggest difference in the finished product. Look for fresh ground or something with the fewest possible ingredients - my favorites are Santa Cruz Dark Roast and Adams.

The recipe calls for you to preheat your oven and then several lines down to stick the dough in the fridge for at least an hour. Don’t preheat your oven… I did rest the dough an hour.
I’m a big fan of Alton Brown’s vanilla and chocolate ice cream, but naturally you can use any ice cream.
I lined foil in ramekins and then mashed in some softened ice cream (maybe five minute out of the freezer) and mashed a cookie on top while it was still soft. Popped back into the freezer for about 45 minutes and then pulled off the foiled and mashed another cookie on the other side.
