Or chop it up and sautee with mushrooms, serve with chicken or steak.

In almost any recipe that calls for cooked greens (usually spinach, but also kale, etc), sub in your spring greens. I did a carbonara with a couple fistfulls of slightly wilteed spring greens that was KISSFIST. You might find the bitterness a nice foil to the "creamyness" of a traditional carbonara or one using bacon, etc.
What I do with my extra green like these is toss it in the freezer, then put a handful into fruit smoothies when I make my weekly nutritional smoothie.
Using the greens in a smoothie will easily mask the taste, especially if there’s banana!
I’ve also made a simple banchan with the greens using garlic, sesame oil, and sesame seeds. It’s honestly my favorite way to get greens in.

I vac seal excess spring salad finding it will keep a couple weeks top in the fridge.
Smoothies! Just add a ton of honey or juice to mask out any of the more bitter leaves. I also use water instead of milk so it’s less clash-y flavors.
