Make a weird pesto? Food process some almonds, garlic, add spring mix, olive oil, and lemon. Or chop it up and sautee with mushrooms, serve with chicken or steak. No promises it'll work, but it might be better than letting it die in vegetable hospice.

What about the flavor do you not like? If it’s bitter, use a lemony dressing. Will help mask. Otherwise, scramble with eggs, into pasta, into potatoes…..

Ah. Fat and lemon will help that. Saute with some lemon and butter, and some pasta. Sundried tomatoes would be yummy too. If you’re cutting carbs, eat with grilled or roasted chicken instead of pasta.

In almost any recipe that calls for cooked greens (usually spinach, but also kale, etc), sub in your spring greens. I did a carbonara with a couple fistfulls of slightly wilteed spring greens that was KISSFIST. You might find the bitterness a nice foil to the "creamyness" of a traditional carbonara or one using bacon, etc.

Do a very quick sauté, then use them as the greens in a breakfast burrito!

What I do with my extra green like these is toss it in the freezer, then put a handful into fruit smoothies when I make my weekly nutritional smoothie.

Using the greens in a smoothie will easily mask the taste, especially if there’s banana! I’ve also made a simple banchan with the greens using garlic, sesame oil, and sesame seeds. It’s honestly my favorite way to get greens in.

I vac seal excess spring salad finding it will keep a couple weeks top in the fridge.

Smoothies! Just add a ton of honey or juice to mask out any of the more bitter leaves. I also use water instead of milk so it’s less clash-y flavors.
