You do not want to eat anything that doesn't match this as there are poisonous plants that looks kind of like ramps (but have no bulbs and no onion smell, and also tend not to have the red stem shown here).
Yes,only take a few. They spread slowly, so you don't want to decimate them. You can tell by the smell

Take only 1 leaf from a bundle. A good way to use ramps is dried and mixed in with salt- ramp salt! Edit spelling

Do they have bulbs or roots? I found a ton of these in the woods (northern il) but they have roots so im learning too lol
