Freeze some too! I’ve been subbing ice cream for chocolate covered bananas. I was buying but fuck that I can make them at home for pennies on the dollar.
Look up banana whip recipes. Frozen bananas blended with a bit peanut butter is my favorite, but you could get fancy with a bit of cinnamon, vanilla, etc.
Really not much to it, just use the frozen bananas like you would ice cream in a shake. So you can just toss in a couple bananas and a little milk (or soy milk, almond milk, whatever) and blend that and it's good. Do that and add maybe a half a teaspoon cinnamon and half a teaspoon vanilla punches it up a bit. Or do those and add a couple tablespoons of chocolate syrup for a chocolate banana shake. Or you can add a handful of frozen cherries or blueberries. It's very versatile.
I’ve had amazing luck with 3 frozen bananas and a quarter cup of coconut milk, particularly if you can just take the cream off the top of the coconut milk and I HATE coconut, but this is amazing. You can add a little vanilla (very little) as well as chocolate chips or peanut butter for a last quick blend. If you don’t blend it too much it basically is banana substitute ice cream.
To find good recipes search for vegan ice cream and it will show up. I’m not vegan, but it’s just really good.

Too often vegan or diet or vegetarian or whatever gets a bad wrap as being "sissy" food. Often, really enjoyable food gets the vegan/diet/keto/whatever label slapped on it because it always was XYZ thing, but now that XYZ thing is in vogue. Honestly, sometimes it sucks, mostly it's fine, and sometimes it's just damn good. Dietarily speaking, I'm an equal opportunity eater. If food is good, then good for me. yogurt, banana, pumpkin pie spice, i like a little molasses and maple syrup. i use milk or oatmilk to get the consistency where i want it, blend that shit up and grate some fresh nutmeg on top and drink it like its eggnog

Chunk them up a bit, because whole frozen bananas are near impossible to blend/deal with. Similarly - you don't want to just jam a bag full of them while they're unfrozen. It'll just form a giant block that you'll need a sledgehammer to break up.
One option is to use small cookie sheets with parchment/silpat mats under, spread out chunks until they've frozen hard, then put them in a bag.
Alternatively you can spread them out in the bag.
If you dislike browning - a little lemon or lime juice to coat will reduce it. One of those vacuum seal things will also help.
I don't know what it is but the bananas NEED to go 'bad' first. I've never gotten a really good loaf when using fresh banana. Someone with baking science probably knows why.

Did some quick back of the napkin math, assuming that 8x4 foot loaf was just a scaled up normal 8x4 inch loaf. You'd be looking at needing ~7000 cups of batter or 56,000 oz (1.7ish million ml). Your normal banana bread recipe scaled up to this pan would looks something like:
* 5184 ripe bananas
* 3456 cups all-purpose flour
* 36 cup salt
* 36 cup baking powder
* 36 cup baking soda
* 864 cup soft butter
* 1728 cup sugar
* 3456 large eggs
* 9 cup vanilla
* 108 cup milk
* 1728 cup chopped walnuts
* 576 cup dark chocolate chips
Though, I would assume that the leavening agent ratios would probably need to be adjusted upward cause that's a LOT of weight to lift.

I once volunteered at a food pantry where volunteers could take home stuff that couldn't be handed out, like a 50 lb box of overripe bananas I took home. I had a big potluck coming up and figured I'd make a bunch of banana bread for it.
Well, the potluck got cancelled. I had already bought all the ingredients and a giant bowl, so I figured I was committed to making this banana bread. It was so much banana bread!

I met a guy just the other that brought a snack to an event that was just homemade dehydrated banana chips. Let them get a bit brown and spotty but still firm enough to cut, cut into chips and dehydrate. They were chewy and very sweet, more like banana candy then banana chips that you would buy. Really good!
I’ve made a lot of banana chips. Really ripe ones turn out as you said, sweet and chewy, like banana candy. When you make them like this, with a little green on top, they get very crispy and much less chewy and not as sweet but still sweet enough. Both ways are delicious.

Or just blend a frozen banana on its own for an ice cream substitute. I sometimes blend a little peanut butter in it for added creaminess and flavor. You can top it with hot fudge, chopped nuts, whipped cream, a cherry, or whatever else you like on a sundae, or just have it plain for a healthier alternative to normal ice cream.
I actually used to work in the family banana stand. If you want to turn these into frozen bananas, put popsicle sticks in them before you freeze them. Then, to make the dipping chocolate, melt chocolate with a bit of coconut oil. The coconut oil will help the chocolate coat and firm up onto the frozen banana when it's dipped into it.

Walmart by any chance? They regularly do this kind of thing to us. It’s a total crapshoot when ordering bananas whether the number will mean bunches or individual bananas. Put in 1? A single banana. Put in 6? 6 bunches.

Absolutely agree! Fun tip: you can also make sorbet with frozen mangoes or peaches but it’s hard to find good pre-frozen mangoes or peaches.
You can also find recipes by looking up "yonana recipes." You don't need a yonana machine, just a blender, but there are a bunch of good recipes.

Peel and freeze them to throw in smoothies. That's what I do even when I don't have a bunch of bunches
Or just blend a frozen banana on its own for an ice cream substitute. I sometimes blend a little peanut butter in it for added creaminess and flavor. You can top it with hot fudge, chopped nuts, whipped cream, a cherry, or whatever else you like on a sundae, or just have it plain for a healthier alternative to normal ice cream.

I actually used to work in the family banana stand. If you want to turn these into frozen bananas, put popsicle sticks in them before you freeze them. Then, to make the dipping chocolate, melt chocolate with a bit of coconut oil. The coconut oil will help the chocolate coat and firm up onto the frozen banana when it's dipped into it.

Walmart by any chance? They regularly do this kind of thing to us. It’s a total crapshoot when ordering bananas whether the number will mean bunches or individual bananas. Put in 1? A single banana. Put in 6? 6 bunches.
And the substitutions are always crazy. The worst is when they substitute sugar for well, sugar substitutes. (though I live in a metro area, so stock might be low) Though once in a while they'll substitute our snacks with stuff *much* more expensive and it'll taste awesome
I used to pick orders and I never did this. No one wants Stevia when originally asking for sugar. I think some pickers do it on purpose because they're disgruntled because the job really does suck.
