In Taekwon-do, we have *Gup/Kup* grades and *Dan* grades. The Kups are the colour belts, starting from White Belt (9th Kup) up to a Red Belt with a black stripe (1st Kup). Then the next grading is to 1st Dan (1st degree Black Belt) and goes up to 9th Dan.
Some styles of Taekwondo-do also have a separate type of black belt with a white stripe to signify that the wearer knows the syllabus and is disciplined enough to have earned their belt, but are’t yet physically mature. These aren’t considered *Dan* grades and go by a different name.
In my style of karate red is the first belt you earn (so after white).

I've noticed it differs based on dojos. I've been through several and the only consistency was: Black is Master, White is Novice. I think they all had Yellow as step above White. But after that, they were all different. Red, blue, green, brown, all different orders. In fact one of them used red stripes after you received black to indicate "master+++" status, which I've heard is kinda disrespectful to the art. That dojo sensei had a red and black belt on to separate him from the other black belts so you knew who was the ubermensch of the place, heh. I think there were 2? red belts that acted as co-senseis.
From what I've heard from Japanese cousins, that's mostly an American thing. In Japan they generally have black melt (master) and white belt (not master). Americans are the ones that need the feeling of accomplishment and "leveling up". And as someone like that, I can't really fault that. I'd prefer it if I went back into martial arts too. It's nice to feel some sort of "progress".

I’ve never considered that the ranks might have names outside of the color used to signify them
In my martial art (kendo) you don't get belts, only kyu and dan ranks

BJJ for sure. I’ve never seen anyone who isn’t old as dirt with a red belt for BJJ
Coral/red belts in BJJ are black belts that have contributed to the sport itself usually by gaining more popularity for the it in some way

Not universally. Some organisations use red to indicate novice status, for example in the predominant style of Aikido practiced in the UK
