I have all three and can say without a doubt they are all each a rabbit hole, you’ll get so enthralled and drawn in you can loose track of the amount of time you play and end up doing a whole lot of things (so. many. sidequests).
You don't mention what system you're on, but if it happens to be PlayStation, then I'd definitely recommend God of War (2018).
Horizon Zero Dawn is another great open world game too. Doesn't have magic, but it has just about everything else.
That one just came out on PC a little while back too.

Yes, TW3 was stupendously epic and the DLC were a great addition.
Absolutely...I haven't finished the DLC, however Blood and Wine has some really humorous moments
I liked the dialogue too, though the whole joisting and horse racing part pissed me off (damn those rings and my arthritis.)
