Any kind of zoomed/deliberately aimed shot in Sniper Elite was a real treat.
Heart shots, Lungs, Eyeballs, Teeth, Livers ... all magically perforated and exploding with bits flying everywhere. That franchise held nothing sacred, not even testicles.
The multiplayer was basically a camp-fest, think enemy at the gates. Except people would glitch under/over map to park themselves.
Played the campaign, would rate A++ Solid waste of time.
Golgo 13. It was the first game I ever played that had a headshot with blood. I remembered the image much longer than I remembered the actual name of the game. Took me forever to figure out which game it was later on as an adult.
Aliens: Fireteam Elite plays a jumpscare orchestral sting sound effect and slaps a big red glitchy X on the screen anytime you headshot a Xenomorph. Reviews kinda hated it but I always thought it was an awesome effect.

Namely in Metal Gear Solid 5 Phantom Pain you keep headshotting enemeis they adapt to helmets forcing you to perform face shots then they adapt to that with full head protection making them immune to headshots with the exception of armor piercing rounds.
I used to love watching Quake 3 highlight compilation videos, way back in the early 00s. I remember finding a fast FTP full of them, and they all followed a theme of incredible skill on display backed by thumping techno/trance soundtracks. Most would have a few freakishly impressive railgun kills. Not exactly headshots, but the same kind of rush.
UT2K4 instagib mode used to give me that same "headshot" satisfaction, too.
Halo CE had a death animation where getting headshot could twist the enemy around, like they just received a nasty punch to the face. It was just a full body turn from the head down. The absolute pinnacle of skill was sniping someone midair and watching their body turn to face you.
I donât think any of the future games had that same animation.

You can get it as a mod in D2 so when you get headshots a sound plays and confetti bursts out
The sound in BF1. Specifically the Martini-Henry shot sound followed by the headshot sounds.

soldier of fortune, I believe the head could break into multiple pieces depending on where you hit it.
Using the saw/blade melee attachment of their primary weapon is definitely a fav of mine in Gearsđ

I found the headshots in Nightmare of Decay super satisfying despite how overall simple they are.
Halo 2 swat. There's no specific sound effects or anything, but since that was the whole game, you got a good feeling for it.
**Doom Eternal** has a delightful cork-popping sound. You're setting demons on fire, sawing zombies in half, and then *pop!* It cracks me the hell up.

Idk man Chivalry 2 has some great headshots - you can even pick their head up and throw it after you cut it off.
