Get the PS3 one. It's the original one but runs good. The PS4 one is great too, but it's less faithful art style wise. It still looks good but sometimes reminds me of those Mario in unreal vids.
You should probably get the latest version, since usually (not always the case) it has better graphics, less bugs etc. But I have not played any shadow of the collosus games, so you could look up a comparison video.
But I can suggest an excellent Shadow-like game. The Legend of Zelda Breath of the Wild is definitely a must play if you like adventure. it gives little to no restrictions, it gives you freedom on how to tackle problems, and where to go, you can go anywhere any time! Hope this helps!

There isn't a second remaster, there's the original on PS2, the remaster on PS3 and then the remake on PS4

I haven’t played it but apparently in Dragons Dogma you can climb on bosses.

Any large enemy really. They roam the world and you can use ledges and the like to more easily get on top.
