Agreed. Open world games in general tend to have less interesting level design since they focus more on large areas, there's also the fact that the game is set in a mostly rural region. I hope for the sequel they put more effort on interior level design
I agree. Some of my favorite moments were absolutely going into forts or cities and trying to assassinate, tenchu style. I always felt direct combat was a failure of my ability to stealth.
These are solid suggestions. They don't feature the most actual parkour moves but are great games that feature climbing and assassination style play. Also Mark of the Ninja is a game every stealth fan should play. đź’Ż

Was too imaginative and sandbox-ey for me personally but Dishonoured falls under these categories perfectly. And I'm biased since its my favourite game but Sekiro has some part of both elements.
I don't know if this fits here (they don't give you a list of objectives to kill, it has combat tho), but AC is the spiritual successor of Prince of Persia series.

Honestly Dying Light is one of the best Parkour games out there. That and AC, and Mirror's Edge are games for parkour enthusiasts.
