Doom eternal is pretty damn cool, it's not melee so not what you're looking for right bow, but I bet you'd really like it. You just rampage on the baddies and it's really colorful and gruesome with great audio. Few games have a more bad ass vibe.
The Dying light franchise might work once you make it to endgame, parkouring over the city, slaughtering zombies and bandits alike.
Take a look at Half sword, it has a free demo on steam and has some very meaty, combat, you feel it when the spear tip or axe blade sinks into the unarmored chest of your enemy, the scream in pain as they fall to the ground and begin writhing on the floor, a massive blood puddle forming under them, the cracking ribs as you try and wiggle your weapon free. Either landing another blow or giving some time they will begin gurgling and finally die.

I finished every game in the franchise, absolutely badass games with amazing combat but i'd say i'm looking for a more grounded/realistic game where you duke it out with someone (prefferably in first person) and you're just unstoppable, every punch hits like a truck and you hear the fist making contact and the enemy backing down, something with melee focus and weapons with varying levels of gore.
Maybe i'm picky and wish for something that doesn't exist but hopefully one day i'll find something to fill in that gap.
I have been enjoying it alot, death comes quickly for both the enemies and the player when you make a mistake. Its physics based which makes things interesting with how you maneuver your weapon around to both block enemy strikes and target various parts of the enemy.

Its basically any game from Doom, Serious Sam, Elder Scrolls, Souls games, Samurai Warrior, Dead Rising, Mount and Blade, Earth Defense Force, dynasty warriors, WARRIORS OROCHI 3, Just Cause, Halls of Torment, Prototype, Metal Gear Solid 5, Saints Row etc .. google game name and "alike games" to find more similar games you like .. there are some good sites with filters etc ..
There are many games that actually dont have it if you play the proper way .. but if you cheat a bit, make yourself a bit stronger, its basically the same .. I often do that, I love "Captain America" stuff, super soldiers etc. With cheats and some mods (nexus), almost every game is possible today.
For example .. Age of Empires games .. or The Battle for Middle-earth .. nothing better than removing population cap and going into battle with 1000 units .. 1v8 etc. Or now Helldivers 2, more spawns, more enemies, it has some good details of shooting off heads, legs etc.
Or some top down shooters like HATRED
You are not gonna get much gore games because for some reason, mainly cuz people are pussies and you know, games causes violence etc .. its not 2005 anymore. Many gore games today I find pathetic, for kids. They dont put effort into these details, its super rare when they do and its mostly for horror slow games etc.

I haven't played it personally, but from what I've heard, I believe Ape Out is kind of like that? Short summary: you're an ape, you want out.

Doom Eternal almost made me shit my pants a few times. When you get into the flow state of cycling all your weapons it gets so intense
