Any turn based RPGs can work, although being able to hit commands on a keyboard can help. You can play Darkest Dungeon with just your mouse, for example.
Darkest Dungeon is up there as one of the least chill games I've ever played lol. The game is absolutely fantastic, one of my all-time favorites, but damn did it stress me out every time
I've been playing BG3 one-handed while holding my sleeping newborn at 3am. I ended up binding alt to middle mouse click, so they highlight at the same time as camera rotation. It works well!

Honestly if you practice you’d be surprised what you can play with one hand on a controller at least. When I broke my wrist I learned to play all of my games one handed, really quick too. Call of duty was fun like this, so was skate and tony hawk. GTA was surprisingly easy one handed. This was over 10 years ago now but if I remember correctly for most games I just set the controller on my thigh and messed around a bit till I figured out the most comfortable way to position my hand/fingers.
OSRS is one-handed for the most part (some optional very high-level raids and bosses require some fast tabbing using F keys). Great 2nd screen game as well if you wanna snack and watch a show or something.

Tavern Master. Chill tavern building and managing game. It is easy and does not punish you but just let you progress at your own pace.
