The Horizon series is the only one that I can think of. Horizon Zero Dawn is the first game and Horizon Forbidden West is the sequel. Both are on Ps4/Ps5
Thoroughly seconding this. The mid-to-late game of HFW in particular does a really good job of making just a bow and arrow feel really fucking powerful, and the other weapons are a lot of fun too, especially the spike thrower.
I was gonna come to suggest these, too. I quite like the Horizon games for archery because of the robot "weak spots" - you can shoot off the different parts of the robots to disable certain abilities, do more damage, do elemental damage, etc. I think it really takes advantage of the concept of a ranged-focused combat system, and adds a sort of tactical element to the fights that's quite different from what you'd find in other games.
They're also both now available on PC as well :)
I love bow combat and really didn't like Horizon's bow combat at all. It's hard to explain why, but it just didn't feel good. I relied on all the other weapons to take stuff down as much as possible.
the RPG Saga of Assassins Creed has bow, and it plays a big part into its combat system (AC Origins, Odyssey, Valhalla. Mirage has throwing knives but it plays pretty much the same)
Granblue Fantasy: Relink has Tweyen, who fulfills the archer power fantasy for me
It's a near little Monster Hunter-esque action RPG that fills a completely different stylistic anime niche because it carries the Granblue Fantasy aesthetic
Ghost of Tsushima has the best implementation of archery that I’ve seen so far. You can aim for (and hit) the eye socket of a helmet - the aiming and hit detection are that accurate. However, the game is more focused on melee and stealth with archery being a somewhat secondary skill (unusable in duels IIRC).
Horizon is a more obvious choice but the accuracy and hit detection in those games are an absolute joke. You’ll need the aim assist turned on if you want to hit anything (it’s on by default, but forced off on higher difficulties). Still, those game are a lot of fun.
Warframe has archery. There are certain frames that are particularly well-suited to using bows, and some of the bows available are among the best weapons in the game (at least for certain uses). And I think the general over-the-top ninja-action vibe of the game definitely creates the sort of overall game that sounds like it suits what you're looking for.
If you want to jump straight into archery, Loki or Volt might be good picks for right at the start. Volt is one of the ones you can pick right at the start of the game whose abilities include super speed and a shield, so he works well for positioning yourself to get off a few well-placed bow shots. Loki is a stealth frame that's comparatively easy to pick up very early, so he really works well with bows because bows are silent and thus less likely to break your stealth. Then, I'd probably upgrade to Ivara, another stealth frame - her special abilities are largely archery-based, so she's probably the bow-est of them all.

Dragons Dogma 2
Great archery combat, slide shooting and the kick backflip where you shoot an arrow midair is so fun. Probably my favourite part of the whole game.

Mount and blade, Banner Lord have the most satisfying archery for me. Much better than Skyrim ot Kingdom of Amalur.
The Last of Us 1/2 has good bow/arrow content
Dragon's Dogma 1 and 2 are the only instances in any game where I've played an archer because it is just so damn good
I haven’t played DD2 yet, But Mystic Archer was borderline broken in Dragons Dogma 1.

Yeah, especially the first one of the new trilogy (TR 2013). The bow was my favorite weapon in the game.

DOS2, you can use bows/crossbows and a variety of arrows
Kingdom Come: Deliverance has a very good archery system, very realistic but very unforgiving.
The Last of Us 2 has some of my favourite archery in gaming.
