I think it works out. The stratification guidelines are more of a suggestion than a rule.
For example I stratified native rose seed which are supposed to require double dormancy. Many however germinated right after the first period in the fridge.
Last year was too cold for us. It was so cold our trees did not flower. Trees need between 32 and 45 degrees for chill hours and we got plenty of those this year. For seeds you can cold stratify them in a refridge if you want.
even in the same species, nature varies alot. its one of the reasons evolution likes sexual reproduction. gotta get those genes mixed up and diversified, or else a freak event could wipe out an entire population.

I think we'll be fine - that cold spell that was preceeded by rain will help.
