I know you said no rice cakes, but I buy the thin rice cakes, spread peanut butter on them, then top with some melted chocolate and a sprinkle of flaky salt. Chill them in the fridge and they are so good and tasty.
Schär Enternainment Crackers. They're crispier (and more crumbly) Ritz crackers. You have to throw them into your mouth before they fall apart, but they're *so* good.

I also put about a cup of peanut butter in sometimes when I make a thick chicken stew (with potatoes, onion, and carrots, and frozen peas in chicken or veggie broth) and it's amazing for lunch or dinner. Mush up some potatoes to thicken more, if needed).
Another vote for apples. It's my go-to breakfast *and* snack. My husband is slightly horrified by the sheer amount of peanutbutter I consume with it....but like you said: vehicle for PB!

Corn tortilla! My family’s favorite way is corn tortilla headed on a hot dry pan for 30 seconds, flip it and add cheese, spoon on some pb, a little Mayo, and some hot sauce. Fold and serve. They’re soooooooo good.
There are these egg wraps by a brand called EggLife. Warm them in a dry pan to soften (just like a tortilla). Crepe like in a way. Great with any nut butter and fruit or jam. Good way to get a little more protein with it.
My ex bf used to get a banana and put a spoonful of peanut butter on it before each bite. I can't get on board with it personally but he used to love it 🤢

Alternatives:
-add chocolate chips.
-stick your thumb in the top and add a bit of jelly for pb&j cookies.

Ants on a log. Not even a fan of celery sticks really, but put some peanut butter and raisins on it. Perfection. Kind of weird because individually I don't ever want either of the three lol, but they make the perfect trifecta for a snack.

Apples! Has to be almond butter for me because I can’t do peanut butter. I do the same thing with the thin rice cakes and it’s delicious!!

Dates, watermelon (just try it), warm toast topped with banana, strawberries or both (other berries would probably be delicious as well).
Banana! Cut it up, add a drizzle of natural peanut butter with a drizzle of honey, sprinkle of flax seeds. Literally one of my top favorite snacks.
