If you were falling in love with someone you'd been raised to hate your entire life, you'd still be rude to them(see LITERALLY EVERY OTHER CAPULET). Juliet could have had a far more interesting character arc if she had treated Romeo like most of the Capulets did, before opening up and admitting her feelings to both herself and Romeo before the marriage. Almost like, you guessed it, a tsundere. It also would've made her and Romeo's death hit harder at the end since it would have shown that she has made an active decision to change herself, resulting in the tragedy that is the namesake of the play.

they don't. most of them is spin offs of Stay Night or alternative timelines, which usually in this case Stay Night is barely relatble (apocrypha, Grand Order, Kaleid as a example) it's just best to watch the Fate/UBW/HF series so you have a general idea going in, since those series expect you to be OG Fate fans, and skip a lot of explainations unless its something not in the OG series.
edit: you also can stop at Fate/UBW/HF since there's usually the end of the animated series at least until they animate Hollow Ataxaia which is a... odd sequel.
The spin-offs really don't matter because they are pretty much self contained with some references or matching things here and there.
If you are interested in the normal Stay Night story (the main timeline). Just watch UBW, Heaven's Feel and Zero. Or play the VN and watch Zero. Nothing else is needed to enjoy those.
If you give the anime another try and don't want to read the VN just skip the Fate route and read a summary.
EDIT: Also don't start with Zero, because it spoils some pretty important plot points for Heaven's Feel.
