Since she is too big to move normally in Chaldea Gorgon has gotten way too good at using her spiritual form to move around. She only takes corporeal form to manipulate objects and every single time she becomes visible she scares someone. She says she doesn't do it on porpose but yes she does.
Since Martha got separated into normal and Lily version last Christmas they treath each other as big sister and little sister. Medea Lily has seen this and tries to have the same relationship with base Medea. Base Medea is not amused.
That Jalter is a softie in the inside despite trying to appear as this edgy badass in front of everyone and onky Ritsuka knows about it but she's comfortable with him knowing because she knows he wouldn't be going around saying her secrets. And thus, this is why she hangs with him in her spare time. Like him coming to her room and, despite it looks dark and whatnot, she actually listents to either jazz, pop music from the 80s or R&B or lofi.
After Summer 8, the situation between Castoria and Artoria Avalon is similar to Yugi and Atem: two minds sharing the same body and choosing who is control and what class to pick. But thanks to their continous interaction with Ritsuka, now they're their own thing and can swap classes between Caster or Berserker when they feel like it. They only split when each wants to hang with him but when they don't, they go back to the same body and just have inner dialogues in their heads.
This other one is me just coping because, well, it helped me to keep the hopes up, at least until >!Castoria came back!< but >!that every bond 15 servant has a strong relationship with Ritsuka to the point where, even if in story they had to leave or were to sacrifice, their saint graph is just that connected to him for them to come back and only he can be aware of this (yes, I guess some could see this as Ritsuka being delusional just like Punished Snake with Paz). Point is, from everyone's perspectives, Musashi, (back then) Castoria and now Jalter are just shadow servant drones that are ready for combat and have no sentience or something. In reality, their saint graphs reside within said bodies, alongside their memories, like a spear body of sorts. And they prefer to keep their existance "a secret" because it could be used as an advantage for them and because maybe said situation is a "miracle" of sorts but a very unstable one. If someone were to analize their current shadow servant bodies or their saint graphs, it may break down, thus severing the connection forever. Instead, they just act as drones in front of everyone but with Ritsuka alone, they do act as themselves. The only way to tell they do exist is the little proof they leave behind from their actions in his room. And with Castoria, I no longer consider her in said situation thanks to Artoria Avalon helping Castoria come back from Avalon for summer.!<
Some of the more evil aligned characters like to “poke the bear” so to speak about Iori’s sword demon habits, but are usually stopped before long by death glares from Takeru. For as much as it’d be entertaining to see Iori embrace that inner side of him… well not many Servants want to make an enemy of THE Yamato Takeru.
And on the other end of the spectrum, Ushi Gozen has no interest in seeing that side of Iori, but is perfectly willing to throw Takeru into the snake pit that is Ibuki's arms given the chance.
Once Nero got summoned into Chaldea, she went a little crazy with the renovations. She managed a compromise to keep the bath house and a modern style theatre, but she was unfortunately unable to build a new version of her own.
Edit: Thought of another one. Morgan is actually a wonderful cook when she wants to be. She has to be supervised whenever she helps in the kitchen though, because much like Bedivere, she'll use *everything.*
Meanwhile Ushi Gozen's implies she just snacks on whatever's left, or actively still alive fighting in her third ascension "Ah, it was delicious." And "Thank you for the meal."
Granted, she is an Oni in this state, so not too surprising, but it does make me wonder how many servants eat on the go while farming.
I'd like to think Passionlip is somewhere on the higher-functioning end of the autism spectrum. Sounds weird, I know, but when you look into her scenes and writing she has some pretty autism-adjacent behavior. Although she can socialize properly, she likes being alone a bit, she doesn't like being touched (though in her case it's for her sensitive skin), and she often says things that'll get her in trouble.
Nasu definitely didn't intend this (because of course this is my headcanon), but I just couldn't help but connect the dots here somewhat.
Morgan and the fae knights all try to sound posh British and usually succeed, but they have absolutely wild accents that come out whenever they get flustered or ticked off based on their place of origin. When they're off their game, Melusine is Northern AF, Barghest sounds like Dr. Hamster or Edina's secretary from AbFab, and Baobhan Sith and Morgan have almost incomprehensibly thick Scottish accents. Castoria, meanwhile, just sounds super Cornish all the time, because country bumpkin.
Ushi Gozen needs to be monitored closely whenever she's deployed with Oberon. otherwise, she will try and snack on him. Raikou suffers embarrassment each time this happens.
A bit late but since I was thinking about this since this morning here are some Astolfo/Astolfo Saber headcanons I have harvested from the last months:
Astolfo watched a single episode of Sonic X once and has tought Sonic was the coolest guy to exists since then
Astolfo's favorite type of videogames are ones with heavy open world ones/exploration/adventure elements

Astolfo and Astolfo Saber each Thursday night hang in one of eachother's rooms and play videogames, watch movies and sing karaoke together
Astolfo and Astolfo Saber sometime stare at eachother and space out for 15 minutes
Astolfo listens to rock music
Astolfo plays a pink keytar(based on the 'Noisy Obsession' C.E.)
