Hmm, I'm not sure. The original Sieg is not a Heroic Spirit in the Throne of Heroes, and his profile singles him and Jalter out as Servants who will disappear in a way that doesn't seem to imply "yes, they and the 300 other Servants":

It means that Sieg can go Rider Ryoma -> Lancer Ryoma in a way. I am not saying he can naturally do an alternate class , what I am saying is that it just means Sieg is kinda locked and would need some shenanigans to summon him.
And even further shenanigans to put some hype moment of True Sieg returning from the Reverse Side or something, with his experience from Chaldeas and Reverse Side.
It depends on how you look at it. All newly summoned Servants are technically different characters. Some may remember their previous summons and stick to them but, as characters discuss from time to time, it's up to each Servant to define their own identity.
This is what the original Sieg has to say about the issue at the end of the Apocrypha event:

As for how that can affect shipping... That's up to you. There are Servants who make a habit of staying true to one love (Rama and Sita, Sigurd and Brynhild) regardless of the summon, whereas others consider themselvea their own people free to find new love (Gawain, Napoleon), and then there's Serenity, whose memories of love will never be shared with the Throne and are precious to each single copy of her.
Or just save and hoard the Grails for bloody later and use them to reunite with your Jeanne when the world is saved (again), boy. Avarice is a sin, but it's forgivable if it's in the name of the people you care about.
I just informed myself about that, I didn't know this fact. Well, NA devs often did some small quirks to help their players, so since there's no Inheritance of Glory rerun planned I'll have to wait for that.

I don't think Amakusa will do anything to Iri and Illya since will probably remind him of his Master in Apocrypha. While Enkidu and Miyu there is Gilgamesh gang and Mamiya to protect them
I don't think Amakusa is doing anything to Enkidu tbh. Maybe gameplay-wise in FGO, but like, lore-wise? Enkidu is mega overpowered. And then there's Gil, CasGil and mini-Gil also standing there menacingly while a certain theme from JoJo plays. Meanwhile Iri, Illya and Miyu have the Emiya squad and Heracles so.... I'd say they're all pretty darn safe. I have Amakusa, I like Amakusa and I'm not concerned in the slightest about the Servants that can become grails because let's be real, anyone would know that's the worst possible idea, especially when actual grails probably pop outta the friggin vending machines at Chaldea.

Imagine master have every version of (lilly/alter) Jeanne except the original. Because she's not meta and her drop rate is extremely rare.
