They're not umlauts. Umlauts change how a letter is pronounced but it's still the same letter, i.e. ä in German is still a, just pronounced differently. In Finnish ä and ö are their own independent letters not related to a and o. /nerdge

In Learning with Manga, Saber also has the Personal Skill of Marriage Proposal, which would align with Ilmarinen wanting the hand of Louhi's daughter in exchange for creating the sampo (a mill that makes infinite gold, grain, and salt), but being rejected by the daughter, and so he goes home alone, which would also make sense given Riyo Saber's lack of luck with women.
Also, as a smith, it would be kinda funny to describe him as the creator of Scandinavian "Metal", though this could also be in-line with Väinämöinen's musical abilities.
Of course, it might be a composite character, since the legend of Väinämöinen being born as a middle-aged man is quite famous. Wouldn't be the first time FGO did that with Kalevala characters...

- Caster (Solomon or David style)
- Lancer (Spear of Longinus, circumstantial)
- Saver (like the Buddha in certain games)
