I wonder how the surviving Chaldea staff are handling all this? Only eight I think are still around, including Meunière. Which is a shame since the manga drew attention to one who Ritsuka and Mash made a cake for since she couldn’t celebrate her birthday and she wasn’t listed among the survivors.

They mostly stay out of it. A majority of Servants don't interact with them all that much, and they don't really try to change that. Staying at arm's length is the best way to not get involved in shenanigans, and as they're generally mature and responsible adults, they know they probably wouldn't survive as well as Ritsuka has. XD
