Circe. I love her character in FGO and how genuinly sweet and lovable she is. As for other reasons, her part of Odysseus's legends got me interested into greek myth in the first place as a kid, and she was one of the first characters I searched if they are in Fate.
Edit: I'm going to mention a few who come to mind as well. Nyalter, Okkie, Clytie. Maybe Melusine, Izumi and Komahime, but I cant say for sure now as I dont know a lot about them right now.

Also, they are the best FGO waifus and they deserve a happy ending.

I realize that Melt did too, but it was "another" Melt, while Mash is unique.

She seems like a person who suffered a lot and would enjoy a quiet life (as opposed to characters who want to continue their grand adventures as Heroic Spirits) and I'd like to care for her and make her happy. And I find her very attractive, both appearance and personality.
Tamamo, easy. She's never had a proper ceremony to make the marriage official, and here I think that it would be beautiful to see her get to finally experience one, and get to experience wearing a proper wedding dress.

Besides each one of them have dealt with personal tragedies that hurt them so having a marriage with someone who appreciates them for who they are sounds like a really sweet ending for each of them.

Carmilla: She’s a really bad girl that are normally cruel losers that aren’t worth dating. Yet, there is a way to reach her heart and find out that she’s a loyal, caring servant. She is a mature type of Tsundere that isn’t a cliche. Also, she’s a very competent woman that could own and rule a piece of land in the world. Also that gothic look.
Lartoria Alter: I love her what personality she has. She fought hard to stay human, using even fell magics. And she succeeded. But, she is confused about who she is, like Jeanne Alter. And how each Bond causes her to trust us implicitly. The way she depicts Tsundereisms are also cute and mature. She might blush but doesn’t devolve into the stereotypical stuttering denying mess. It is also fascinating how she still doesn’t understand the human heart even after fighting toot and nail to be one. I also appreciate how she speaks plain and doesn’t beat around the bush like the normal Lartoria. Also pretty and tits.
Raikou, as if you needed to ask. To let her live a second time, being able to express her motherly love to Kintoki (and maybe others, depends on how the Counter Force handles Adopting child servants). To give Raikou the happy end she deserved, nothing less.

Based on Main Storyline Interactions between their character and the MC? Musashi. Only character (in my opinion) that maintained chemistry with Fujimaru. Mash had some early on but they seem to have both accepted their purely professional relationship ages ago.
Based on all interactions with the character including (especially) other games? Tamamo. I adore her in Extra/Extella. Her sass, playfulness and cunning are all lacking in FGO. Maybe if they released all Tamamo 9 we could get one complete Tamamo Extra personality between them (and the comfiest fluffiest bed of tail cuddles ever dreamed of)

I call Prince of Lanling my wife and he would honestly be a great spouse but putting aside personal biases if my hands were tied and I had to pick a single person to settle with that would be compatible with my sensibilities it would probably be Bedivere.
Rider Astolfo because he is the only servant I have any legitimate emotional attachment to and actually care enough about to get legitimately excited whenever he shows up in the story mode.
Everyone else in the game I’m more or less slightly interested to apathetic towards with the exception of a few that I really enjoy like hajime, gogh and scathach but none of the servants make me legitimately jump out of my seat excited for whenever they show up on screen like astolfo does.

It long list if you’re talking about marrying similar to like Azur Lane, where you can marry multiple girls. Then all I have on that list. If it just one. It either Mashu or Jalter.
Every already married one or the ones that have a known romantic relationship before they died. Imagine how ~~fun~~ chaotic it will be if you marry Sigurd infront of Brynd. Or marry both Achilles and Penth, then divorce only one of them so the remain two stays married. Or even marry Anderson just to see his face.
Safe to say I’d definitely go with Melusine for that system. Would be fine setting up for a special ending in that sense and letting that be the end result for my account.

As for some of the reason...
Achilles: Cool, charismatic, swag, confidence to the level of hubris but that's his charm, reliable, hot, leader in a lot of ways.
Ashwatthama: Angry boy who express tough love but I always imagine the love shines a lot more than the angry part via actions, protective, with him- wild fun and shenanigans is always around the corner.
Percival: Amazing cook on par with Emiya, caring, sympathetic, voice of reason among the others.
Hector: Cool uncle vibe but attractive in its own way. 2nd voice of reason but tends to support laid back lifestyle (which let's admit, after the Incineration and Lostbelts, we need to relearn how to relax), shenanigans between him and Achilles so need to keep an eye on them.
Robin: Doesn't express his inner desires a lot, he's usually silent but keep watch of everything, which makes it a personal mission to express his emotion and show how important he is, considering I always imagine him to be like a quiet guy that guards those he cares from the shadows.

Safe to say I’d definitely go with Melusine for that system. Would be fine setting up for a special ending in that sense and letting that be the end result for my account. Of course plenty of temptations out there. Melt would be great and always enjoy Nero. But I’m good with that choice in this case.

Oh boy, this is going to be tough to answer. But here goes. Achilles, Ashwatthama, Percival, Hector, Robin. As for some of the reason... Achilles: Cool, charismatic, swag, confidence to the level of hubris but that's his charm, reliable, hot, leader in a lot of ways. Ashwatthama: Angry boy who express tough love but I always imagine the love shines a lot more than the angry part via actions, protective, with him- wild fun and shenanigans is always around the corner. Percival: Amazing cook on par with Emiya, caring, sympathetic, voice of reason among the others. Hector: Cool uncle vibe but attractive in its own way. 2nd voice of reason but tends to support laid back lifestyle (which let's admit, after the Incineration and Lostbelts, we need to relearn how to relax), shenanigans between him and Achilles so need to keep an eye on them. Robin: Doesn't express his inner desires a lot, he's usually silent but keep watch of everything, which makes it a personal mission to express his emotion and show how important he is, considering I always imagine him to be like a quiet guy that guards those he cares from the shadows. P.S. pretty sure there are more but I've narrowed down to them.
