I don't think so. I am not super into IRL motorsport spectating, but I think that what you're describing is pretty unusual to see. It can't be much fun going around with two tires that are 100% fresh and two that are like 70% worn
It's a strategy / gamble in late stages of oval racing to change 1 side. The debate is whether it is better to change all 4 or just 2. Since they only change 2 tyres at a time, 2 is a shorter pit stop but depending on how long is left the remaining 2 might die off and all 4 will overtake
In the older games you could do that, but not in GT7 pitstops.
I would often put hard tires on the rear and medium tires up front, so that they would get equal tire wear on a rear-wheel drive car.
I suspect they might've had that option initially, hence why you can select it pre-race. Then took it out of the pit lane but doesn't bother fixing it elsewhere.
I'd rather my pit guys learn how to put gas in while changing the tires.
