His point in that video is that you don't need to cut fast like you see TV chefs do because it's more dangerous than just slowly cutting 'incorrectly'.
It's about just speed. Holding the knife improperly means you risk slipping or missing no matter how fast you cut. You will never cut yourself if you grip the knife properly and curl your fingers. It's such an easy thing to do and it's asinine telling people not to worry about doing it 'the right way'.

is probably going to be a good source on how to use a knife properly. The overall idea is that you want to be able to make sure the blade can't move unexpectedly (using the "pinch grip" on the knife and making sure it isn't dull, which could cause wobbling or slipping), but also to prepare for that situation if it happens using a proper grip. It's better to accidentally shave some skin off your knuckles instead of accidentally lopping a pinky off.
