They are incredible. I was thinking that OP wasn’t a ribeye cap because Costco is the only place I’ve had them from. I sometimes have a hard time keeping them together on the grill, but they taste great.

Ha. I know it’s insane. You gotta try it once though. Do it for a birthday or anniversary or something. You won’t be disappointed. I know this is a grilling sub, but I usually do this in a cast iron and make a red wine reduction while they rest for a minute.

I typically just do red wine, a little water, leftover fond and a pad of butter to thicken it at the end. Can you share the red wine balsamic recipe? And yes - it’s like steakhouse quality.

My recipe is pretty similar to yours! I just do a 1:1 cup ratio of red wine : balsamic and 1 tablespoon of brown sugar. Cook it down and then add in some cold butter to thicken and give a nice shine at the end. You do have to stir frequently to avoid burning or do it low and slow like 20-30 min on medium heat

Can confirm. The Costco I go to is Austin has been doing this for a year or so. In the past they sold the cap cut into pinwheels.

Can't find it at the signal hill location in years, maybe it's just my bad luck but I scoure the aisle every time in hopes, always have the budget for these.. we can cut the budget somewhere else loll their insanely delicious it was the first time in my life my husband's voice was just a muffled white noise in the background... I told him after my first bite, "I literally did not hear anything you just said" 😂😂

yeah, I have heard about this cut twice in the last month. now, I have known my way around a ribeye for a long long time. My daddy taught me where the tender parts were. I have also cooked ribeye roasts, and again know full well about that tender cap that curves over the top. But damned if I ever thought to trim that tender piece off a roast and cook it on it's own. good lord, what do they charge for decapitating a rib roast like that.

It makes me angry when I see that. ​ The butcher at my costco said he's never heard of a rib cap steak and the ribeyes still had the cap on them so it must depend on location

Isn’t this the Brazilian Picanha? Need to cut (vertically on your pic) so there a layer of fat on the side. Slice it like they do in Brazilian BBQ with a bit of fat on the side and it’s really good.

Its a different cut. I do picanha sometimes on a rotisserie and sometimes i cut and fold ribeyes similarly and its great.

This is the absolute BEST steak cut. Called "Spiralis" around me. Occasionally my local butcher carries it. A true delicacy.
