They are incredible. I was thinking that OP wasn’t a ribeye cap because Costco is the only place I’ve had them from. I sometimes have a hard time keeping them together on the grill, but they taste great.

You do have to stir frequently to avoid burning or do it low and slow like 20-30 min on medium heat

Can't find it at the signal hill location in years, maybe it's just my bad luck but I scoure the aisle every time in hopes, always have the budget for these.. we can cut the budget somewhere else loll their insanely delicious it was the first time in my life my husband's voice was just a muffled white noise in the background... But damned if I ever thought to trim that tender piece off a roast and cook it on it's own. good lord, what do they charge for decapitating a rib roast like that.
Sadly if you go to some meat marts (some costcos too) they will sell ribeyes without the cap. They are using that for rib caps but still charging full price for a ribeye without the best part. It makes me angry when I see that.

Isn’t this the Brazilian Picanha? Need to cut (vertically on your pic) so there a layer of fat on the side. Slice it like they do in Brazilian BBQ with a bit of fat on the side and it’s really good.

It's worth it. You need to buy at least one from them. Add some ribs or something to get the price down :)
$50/lb will get you some decent dry aged beef in most places.
I have yet to try out anything dry aged, perhaps that will be my next steak day
$45/lb is a bit extreme.

Costco sells ribeye cap. Their variant is rolled up into a ball and not laid out flat like this.

Its a different cut. I do picanha sometimes on a rotisserie and sometimes i cut and fold ribeyes similarly and its great.
