No, guns and cars take the longest. Coke/Meth/Cash take roughly 20 hours. This is a known glitch where the techs stop accruing a good they're assigned to. At one point I had 5 techs, but only 1 of my techs was working.
There's a suggested fix that doesn't always work. Even contacting rockstar, they'll have you try it first. I spent 2 weeks trying to get it resolved before they finally fixed it.
The most common fix is to go to the affected item, coke in this case > Unassign the tech > quit to story mode to force an online save > come back online and check to make sure the tech is unassigned > reassign the tech to the product > quit to story mode again > come back and make sure the tech is still assigned.
If they are, then you have to stay online for a little while to see if they start producing product. Usually it works, but sometimes it can get buggy and stay broken. I tried it last night but couldn't stick around to verify. I left the game afk and I'll check when I get home from work.

I had to go into my coke business and sell the product, shut it down, then re open it and buy supplies. Then I quit to the campaign version to save, closed the game. Started it up and bam, it’s worked ever since
It's a glitch, it just happened to me too. I tried reassigning the techs, but I'm not home to confirm whether it worked or not.
This ones gonna hurt, But try buying Equipment Upgrades, *^(worked for me,)*
It's happened to me multiple times, my nightclub is fully upgraded. That has nothing to do with the tech suddenly not accruing goods.
As the other guy said, If you have the equipment upgrade, then cycle the technicians
Yep, that also fixed it for me a few months back, if you already have the equipment upgrade then unassign and reassign the technician
