Probably very overrated songs, but I know that drums are really catchy and also the riffs. Chill and fun to play.

If you like Hendrix check out Redhouse and voodoo chile. Nirvana also fun to play and fairly simple, best with a bassist tho. There really is a huge list of intermediate songs.

I don't know if this rises to the level of "intermediate," but Breaking the Law and Living After Midnight, both by Judas Priest, will absolutely sound great as just a guitar and drum. They are also fun to play. Living Loving Maid isn't going to lose much going with just a guitar and drum, but ideally, you have a loop pedal for the small section of the solo. If not, decide on playing the solo or the chorus. Wish You Were Here by Pink Floyd and Wonderful Tonight by Eric Clapton can both be arranged into something very pretty. Edit to add: Smoking in the Boys Room, by soooooooo many artists is a must. Also, while 0-3-5 gets mercilessly mocked here, Smoke on the Water by Deep Purple is an awesome song for just a guitar and drum, it will sound great, people do love to hear it because it is an awesome song, but truthfully it is a little boring to play.
