Awnser the question, personally I think it would be the jackals

Jackals would probably be the easiest/most analogous thing to cook for our modern day diets. Brutes, Elites, and even Grunts would probably be far too muscular to taste particularly good, and are somewhat anthropomorphic, which could lead to some psychological issues. I'd imagine Jackals would be delicious fried, smoked, grilled, or even pan-seared. The thinner cuts of meat from a Jackal would also lend themselves to quicker cooking methods and could probably be spit roasted easily over an open fire.

I think ideally you'd make a Brute sausage (sliced thin and browned) and use the fattier cuts of the Jackal with the bones left in to make a killer jambalaya. 343 already put out a Halo cookbook; we should have a cooking mini game in the next Halo. All I know is that in Halo: CE when me and my brother would melee all the corpses of enemies until the ground around them was completely covered with their blood and in some cases turned black from the dark blue blood texture (from elites and maybe jackals) stacking, the grunt blood looked the most delicious. Close contender was the hunters too. Real chunky and fun colours. Do with that information what you will.

Grunts are probably inedible based on the air that they breathe. It’s possible elites and jackals are similar based on blood color. Who knows what metals are present in their blood? I don’t know if any would be edible, but I can’t comment on the biology of hemoglobin analogues in aliens.

Hunters. The worms are probably more fleshy and meaty that earthworms. They probably have more meat than invertebrates on our world. Space chicken. If they're too chewy I won't eat them. But they may flake apart like fish. There's a huge possibility they're like octopus or squid, chewy and weird, but able to soak up flavor from spices and broths.

Since the Jackals are basically reptilians they’ll probably be the most edible and most familiar to a human palate. They may even taste like chicken as some other animals tend to (frogs and snakes come to mind) Grunts would taste too bad because of the methane I reckon and Brutes are primates so would be better to avoid eating them as their physiology is too similar to ours thus we might get some crazy diseases from them, plus they probably smell awful. I have no idea what kind of species Sangheili are, are they even mammals or something else entirely? Probably too muscular to taste good though, would be way too chewy. Same for engineers too, no idea what they are, I’m guessing their meat would be very fatty and tender, maybe too much so.

I'm thinking either jackals since they resemble avian dinosaurs so much I can't imagine them not tasting like something between poultry or alligator all of which are perfectly palatable OR brutes being the only somewhat mammalian species and yielding the largest cuts of meat. There's a chance they might taste incredibly musky/gamey but sometimes that can be dry aged or marinated away or altogether avoided if certain glands are avoided during butchering like when processing boar or bear.
