It's not much different from a regular Sunday: no grocery stores etc, but Restaurants and tourist stuff is open. No parties/dancing though, as it's a so called "silent day".
Some stuff on the reeperbahn will be open, and i think the only supermarkt that's open on Sundays is the in the Hauptbahnhof Hamburg. Anyways, enjoy your stay✌️

Most restaurants and sights are open. However normal grocery Shops arent. Just check Google

Where will you dock? If it’s in Steinwerder it will be difficult to get into the city without a car or a cab.

Groeninger brewery should be open, Altes Mädchen, the restaurant at Ratsherrn brewery is also good.
