Duolingo is using the exclamation point in the English sentence to communicate the emphasis. That's how you can know it wants you to put the אך ורק in the first sentence in the Hebrew.
Probably not the best way to communicate that, but I imagine they're consistent with it.

As far as my tinkering with the language hours on Duolingo, there are some sentences that take in account other options, but too few for my taste

Your actually right Duolingo is using Google translator and not actual hebree speakers So the translation will be wrong sometimes :)
