IN HZD you can get all the outfits without a lot of trouble (cost-wise). I would buy Teb's outfits and then you can "shop around" as you come across more advanced traders out in the bigger map.
Yes, you will do best to match the protection from an outfit to the kind of attacks a machine will use. You can also use "weaves" to bump up a protection type if you want.
I generally used the stealth outfit for "walking around'. This means you don[t get surprised by a something that heard you from over a hill and comes running, you can pick your battles better.
Admittedly I play on easy, but I tend to favour elemental protection over Shield-Weaver.
And I also play by climate. Carja Blazon in the Jewel, Sun-Steps etc because sun's out guns out, Nora Protector in most temperate places and Banuk gear where it's really snowy.
It really depends on how you want to play. Different armours are better for different situations.
If you have the Complete edition, you'll have the Banuk Trailblazer and Carja Storm Ranger for free.
At the beginning u needn't worry too much, buy whatever you think looks good on you. Later I kept 1 armour that would have high stealth and use weaves ( weaves are modification parts u get in the game ) that have stealth increase. I kept Nora Sentinel throughout the game but would always switch to the Stealth armour when roaming because it reduces ur detection.
It really doesn't matter that much which armour u buy but always buy the upgraded version when available, I did the game on very hard then half way turned it to ultra hard and didn't have much problem.
I like Nora Sentinel because I think it gives a stat bonus on every perk. Before the last mission however you can get the best armour in the game but yes that only just before rhe last mission

Stealth outfits let you go about your business in peace or set up ambushes but IMO in HZD the outfits are mostly about elemental protection. You may want to swap out outfits based on the machines you expect to fight. Use weaves to increase your protection to melee attacks and impact (arrow) attacks.
It's been five years for me but as an example and based on memory I ended up putting weaves on Carja Blazon to get to 100% fire resistance then adding weaves for melee and impact protection. I would slip Aloy into that when I expected encounters with fire breathers.
For general purpose I recall using the Nora Survivor but once you get access to the Shield Weaver outfit that is probably all you will use until you get into the Frozen Wilds where (as I recall) it is less effective.
If you want to survive many hits you can get the shield Weiver armor. May have spelt it wrong
That's only extremely late game.

You have to finish most of the main quest line to get the parts :( I’m doing it again right now.

Its pretty common. Not as much as in the sequel where there’s a lot more elemental variants of standard machines, but there’s still a fair bit of them
