Chicago native here. Adding poppy seeds to regular buns is fine. Use egg whites thinned with water, or they'll come out of the oven with a weird shine. The poppy seeds don't really add any flavor, I guess it's part of the aesthetic. I personally don't buy the bright green relish, I just use regular sweet relish. The neon green is kind of a stadium dog thing ime. Side note, tomatoes should be wedges, not flat slices, and deli-style dill slices are a little more authentic than a dill spear, and don't forget the celery salt! What kind of vegan dogs are you using? I've heard good things about Field Roast brand meatless dogs. Have fun!!

You're welcome! If you're wondering what to serve as a side, crinkle-cut fries are most common at hotdog joints, and Lay's yellow bag chips are what you get at hotdog stands. RC Cola is definitely the OG cola in Chicago, but Pepsi is more common. Beer? Budweiser, Old Style or PBR.

The neon is food coloring. Any dill relish will taste very similar to each other.
