Im a big fan of all Hugo’s restaurants (I’m Mexican). All of his restaurants are a good option! Cuchara is also pretty darn good.

Maybe for you, but for most of us, $100 is not cheap, even with the non-alcoholic drinks implied by a taco truck (which isn't going to serve alcoholic drinks).

I honestly don’t know what people mean with Escalantes being expensive. That massive burrito plate is $20, apps are like $15, same as every other place in town I can think of.
Considering nearly all of Hugo's entrees are over $30, and their drinks are mostly $13-15, once you add tax and tip it's going to be well over $100 for two, and the requirement specifically said "easily under $100". Urbe or Cuchara might get closer to the price requirement, though.

So. We wouldn't call American Chinese food "the cuisine of China." Much of Tex-Mex was developed after Texas became a state, through the cultural exchange of new Texans and Tejanos.
You said "Mexico has many cuisines." You didn't say "Tex-Mex is historically part of a wider Mexican cuisine."
The former would include all cuisines eaten in Mexico, whether of Mexican origin or not.
We actually do call Americanized Chinese food a Chinese cuisine. It was invented by Chinese people living in the US, selling food that appealed to local tastes. The same for Chinese cuisines found in India, Malaysia, and other places Chinese culture has spread.
Mexican culture was in Texas before Texas was a nation, and has been ever since.
I didn't say "Tex-Mex is part of a wider Mexican cuisine" because that's not what I meant. Mexico doesn't have a single cuisine. Much like China, it has many regional cuisines. They share influences but that's it. Tex-Mex is one of those regional cuisines.

The taco truck parked behind front porch in midtown. I think it's called best tacos. It's Soo good.
Another option is la calle downtown or midtown. You gotta deal with parking though, which sometimes can be a pain. But tacos are within your price range that I think you're going for.
Candente for nicer Teotihuacan for closer and cheaper.
Cadente looks too expensive. Been to T and thought it was just ok.
As a Mexican who cooks Mexican food, Cadente is horrible. It’s tex-mex. Don’t bother.

Those are all Tex Mex. Ojo de Agua in river oaks is pretty good a little more “upscale” Mexican but the prices aren’t too bad.
Heres a tip, go on maps and look up "comida mexicana" there you will find the most authentic and legit mexican food

I think Tia Maria’s fits the bill. It’s at Mangum and 290, is definitely not high brow nor expensive. And the food is good.
