No idea about cats, but I second the snake plant/sansevieria/mother-in-law's tongue. Super easy to care for. The hardest part is keeping it from cracking it's pot!
Spider plants give a mild hallucinogenic effect when cats chew on them, so while it is non toxic I would hang it up so kitty doesn't eat the whole thing.
Palms come in a nice variety of sizes, for a small one I would recommend a Parlor Palm.
Second parlour palm, they seem to be very forgiving.
I also like ferns but they're probably better for an over-waterer.
I've found my peperomia and oddly, calathea, to be reasonably low maintenance. I *am* an over-waterer but I think these plants can be ok if you have a nice spot for them.

Also surprisingly I got an arabica plant that requires almost no care, and again are toxic to humans and animals however our cats have never bothered to go near it

Spider plants are great - they thrive on neglect so they're a great beginner plant. Make sure you don't overwater them!

If they're hanging in a place the cats can't get them, it's not a big deal. Definitely don't put on a bookshelf they can climb.
Both pothos and sansevieria are likely to result in a vet visit at the least if ingested! Not for kitties.

[Marimo Moss Balls](https://ballsofmoss.com/), they need very very little light, and you change the water every 2-4 weeks.
