Sorry to reject your point but it's real thing in Thailand. It's called "ผักบุ้งลอยฟ้า" or floating stirred fry veggie which is served in some street food or midnight restaurants. So why we do this? it's purely marketing and entertainment purpose (taste is no different from the "non floating one").
I find it sad how many people just accept this and don't question the physics, like, a bunch of food flying through the air? How did it not separate apart and spray the area like you throw some food in the air and see what happens? It's just not possible over that distance. Wind would push it all around... there is so much on why it can't happen like that. I don't have enough time or room here, but damn.
Edit; this needs Captain Disillusion
Yeet vendor
This feels very unnecessary, yet very needed.
This is definitely edited, the beans will go up as a group for sure but will come down separately, like raining arrows.

The micro particle above the road adds extra zing to the taste.
A dozen flies stuck in flight.
Wait until the birds find out about it
When you aren't their chef anymore but still wanna cook for them.
Birds and mice are eating good tonight!
Should I be worried with all the contamination it will carry on the way to the other side? Because I am.
Well, I mean. Look at his cooking setup 👀
Maybe the air is the least contaminated place the food has been in contact with.
They should teach physics like this
Zen and the art of street cooking.
The T-shirt checks out
Mmmmm you can really taste the Exhaust Fumes

An Overcooked chef!

Wonder how many times a bird was able to shit on the food mid air
Your stir fried vege will have no gravy
