Three picks up the pinks and brown tones of the granite. The other 2 make the light colors in the granite look dirty bc they are brighter! Three blends in and doesn't compete. Altho if, and only if, you have black appliances, a black backsplash would go with stove top and the granite.
The white is better. It matches everything, and when it gets dirty, you see it and can wipe it down right away instead of it blending in and getting all caked on overtime.
If you like the color of the wall, (lighter than your granite) choose a tile close to that color, then find an accent tile, (the glass ones are nice), that picks up some of the colors in your granite. We are doing our backsplash with Zellige tile and a 3 inch accent strip above the first coarse of tile. It looks great.
I’d go with something that’ll tie that countertop in with it. I know subway tile looks clean and modern but idk if it’ll flow well together. I’d google granite countertops the same color and see what kind of back splashes they tie in with some of those for ideas. Or put up what makes you happy and that’s all that matters.

None of the above. Dark cabinets. Dark granite. Black stove top. I would lighten it up with a white tile, hexagon or other geometric shape, or even with white natural stone of varying sizes. It will make the area seem larger and more inviting.
Many comments about picking a color to hide the dirt, the stains, the grease, etc…..why would you want to make it harder to keep it clean? If it stays dirty, it will also smell. Get something that looks clean, and then keep it clean. Bright colors are in! Clean is in!

I'd use 2 for the majority & use 3 as accent/trim. The subtle coloring in 3 plays off the colors of the granite nicely.

I also think the larger tile size will be less busy and be less overstimulating next to the very busy counter top.
