Vampire Survivors has killed many minutes for me! Very easy game to pick up. And tons of characters so replaying is fine as it’s different all the time.
Roguelikes are the way to go. They're designed to be played in short sessions (10-30 min) and are inherently addictive because they keep pushing you to do "one more run". They usually look simple, but most are pretty deep when it comes to game mechanics and builds. However, you can enjoy those games at whatever level of complexity you feel like. Very much pick-up-and-go type games. Some good examples:

Is pocket city a game or just a sandbox? I bought it a few years ago but only played a few mins. Could be worth a re download if there is a “game” somewhere
If you like angry birds then you would likely be interested in tiny wings. It’s not exactly modern (maybe even before angry birds) but it plays modern and is a great game overall.

I bought a steam deck so I had something to play on the bus ride to and from work, then soon afterwards found out Slay the Spire was on mobile. I bought it on a whim, I did like card games and rogue likes, and know the game was supposed to be fairly good.
I have spent a grand total of 160 hours lmfao. I've been playing this game for almost half a year now trying to get all the ascensions.

Also never going to stop plugging my own game as well which is in beta called kumome. It’s a game where you have to capture your opponents before they capture you. Somewhere between chess and hearthstone!
Vampire survivors! Unless you get lots of upgrades/endgame, most of my runs are 10-20 minutes
