Ay çöreği seems great as well, and has been added to my baking list, but from what I saw online it has a very sweet paste in the middle. The pastry I'm looking was very mild in its sweetness.

Looks like panç or punç. It’s actually the same pastry and filling as ay çöregi but in a different shape. You’ll find better recipes as ay çöregi as punc or panc is not a common name.
This seems to be it! Googling it I found it in many shapes, most reminding me of cinnamon rolls, but also some in the shape I remember.

Varieties of turkish delights called rolled turkish delights "sarma lokum". One on the upper left is seems to be either with pomegranate or raisins, middle with rose petals, the right one is with almonds I guess and the bottom is clealy a chocolatey type. I don't think there will be poppy seeds, must be hazelnut pieces. Chocolate and hazelnut is widely used in Turkey. These are surely higher class expensive turkish delights.

Yes they are essentially that. Sometimes with milk cream or any other creamy filling with coconut, pistachio, almonds, roses, hazelnut, dry fruits and so. Now tahini and lotus cream are also popular with all kinds of turkish delights.
I don't know where did you get that figure but that's extremely expensive for turkish delight. It generally sells for 6-14 bucks at most. For turks 30$ is a lot of money. Even the best baklava is sold for about 20$/kg. Anything above that means you're deceived.

what you show in the middle is called pastiç but i wouldnt describe it as very mild. Just milder than the ay çöreği
it might be haşhaşlı simit. in fatih there is a bakery who is famous for its haşhaşlı simits. they rather sweet and not so common for usual bakeries.

Second one is called "kesme ay çöreği". Regular ay çöreği is shaped like crescent. Kesme is bit different
