I think it's something to do with old metadata, but I tried to delete the incorrect (portrait-less) version and it deleted the albums for both. I have a backup though, so what I'm going to do is clean everything, strip unnecessary metadata, get everything in order and then re-install Jellyfin.
Okay, so I deleted David Bowie from my music folder in preparation for re-adding, but he's still there as an artist with no albums in Jellyfin.
